Quick Salad

Toss together and serve with favorite dressing
- 1 bag mix greens
- 1 chopped tomato
- Croutons
Fish, Potato & Leek Stew

Remove fish from freezer and let thaw at room temperature for 20 minutes while preparing other ingredients
- 1 lb frozen firm fleshed fish fillets
- 1 lb leeks
- 6 c. water
- 4 chicken bouillon cubes
- 4 c. 1” cubed red skinned potatoes
- 1 bay leaf
- pepper to taste
Herbed Cheese Mashed Potatoes

Cook potatoes in water until tender
- 3 lbs potatoes, peeled & cubed
- 1/2 stick butter
- 3/4 c. sliced gr. onions
- 1 tbs chopped fresh basil
- 1 tbs chopped fresh chives
- 1 tsp dried dill
- Salt & pepper to taste
- 6 oz shredded cheese
- 2/3 c. milk
Cobb Salad

In a large salad bowl, toss together the lettuces
- 3 c. chopped romaine
- 3 c. chopped red leaf lettuce
- 2 chopped hard-boiled eggs
- 1 chopped tomatoes
- 2 diced avocado
- 4 oz diced deli ham
- 1/2 cup crumble Blue cheese
- 6 slices cooked and crumbled bacon
- chopped fresh chives
- Blue cheese dressing
Mashed Potatoes

Bring a pot of salted water to a boil
- 2 1/2 lb potatoes peeled and diced
- 2 tbs butter
- 1/4 c. sour cream
- 1/2 c. milk
- Salt & pepper to taste
Roasted Sweet Potatoes

Peel and cut the sweet potatoes into 1-inch pieces and put in a baking dish
- 2 med sweet potatoes
- 1 tbs olive oil
- 1 tbs honey
- 1 tsp lemon juice
- salt & pepper
Pepper Steak

Sprinkle strips of sirloin with garlic powder to taste
- 2 lbs beef sirloin, cut into 2 inch strips
- Garlic powder to taste
- 3 tbs vegetable oil
- 1 cube beef bouillon
- 1/4 c. hot water
- 1 tbs cornstarch
- 1/2 c. chopped onion
- 2 lg green bell peppers, roughly chopped
- 1 (14.5 oz) can stewed tomatoes, with liquid
- 3 tbs soy sauce
- 1 tsp white sugar
- 1 tsp salt
Stuffed Green Peppers

Preheat oven to 350 degrees F
- 4 lg peppers, any color
- 2 tsp salt
- Filling and Sauce
- 2 tab olive oil
- 1/2 c. chopped onion
- 1/2 c. diced celery
- 1 14oz can diced tomatoes
- 3 tbs tomato paste
- 1/3 c. water
- 1 clove garlic, crushed
- 1/2 tsp basil
- 1 1/2 tsp salt, divided
- 1/2 tsp pepper
- 1 egg, beaten
- 1 tsp Worcestershire sauce
- 1 lb lean ground beef
- 1 c. cooked rice
- 1 c. shredded cheddar cheese
Guacamole Rice

In a medium bowl, mash together avocado, lime juice and salt
- 1 ripe avocado, pitted, peeled and diced
- Juice of 1 limes
- 1/4 tsp kosher salt
- 3 c. cooked white or brown rice, quinoa, barley or couscous
- 1 garlic clove, crushed with press, or minced and ground into a paste
- 1 Roma tomato, diced
- 1/2 jalapeno pepper, seeded and minced
- 1/4 c. chopped fresh cilantro
- 1/4 c. diced red onion
- 1/4 tsp cayenne
- 1/4 tsp ground cumin
Turkey Stew

Add all the above ingredients, except turkey to the slow cooker, stir to combine
- 1 diced celery stalk
- 1 chopped onion
- 2 minced garlic cloves
- 2 peeled and cut sweet potatoes
- 2 sliced carrots
- 1 c. frozen peas
- 2 c. chicken broth
- 1 14oz can fire roasted tomatoes
- Salt and pepper to taste
- 2 c. leftover turkey or chicken chunks
