Kittencal's Perfect Pesto

Directions 1Combine the basil, olive oil, pine nuts and garlic cloves in a blender (or food processor)
- Ingredients
- 4 cups fresh basil leaves, packed (about 3 large bunches)
- 1/2 cup olive oil
- 1/3 cup pine nuts (or can use toasted walnuts, or use half each)
- 3 medium fresh garlic cloves
- 1/4-1/3 cup freshly grated grated parmesan cheese
- 1 teaspoon kosher salt (can use 1-1/2 teaspoons if desired)
- 1/4 teaspoon fresh ground black pepper (optional, or use pinch cayenne pepper)

- 9 1/2 ounces all-purpose flour, approximately 2 cups
- 2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 2 1/2 ounces shortening, approximately 6 tablespoons
- 3/4 cup milk
- 1 egg mixed with 1 to 2 teaspoons water
- Vegetable, canola oil or butter, for frying

- 4 mangos, peeled and diced, approximately 2 cups or 12 ounces

- 1/2 cup butter, cubed
- 2 tablespoons corn syrup
- 1 can (29 ounces) sliced peaches, drained
- 1 loaf (1 pound) day-old French bread, cubed
- 1 package (8 ounces) cream cheese, cubed
- 12 eggs
- 1-1/2 cups half-and-half cream
- 1 teaspoon vanilla extract
Spanish Pea Soup with Crispy Ham

In a deep (8 x 5-inch) heavy-bottomed saucepan, heat 2 tablespoons of olive oil over medium heat

- 1/2 cup chopped shallots (2 large shallots)
- 1 tablespoon minced garlic (3 cloves)
- 4 cups chicken stock, preferably homemade
- 2 pounds frozen peas, such as Bird's Eye Sweet Garden
- Kosher salt and freshly ground black pepper
- 6 thin slices Spanish Serrano ham or Italian prosciutto
Game Time Chili Dogs

Heat the oil in large nonstick saucepan over medium-high heat
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 1 to 2 bell peppers, diced
- 1 jalapeno, seeded and diced
- 1 medium onion, diced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- Two 14 1/2-ounce cans petite cut diced tomatoes
- One 15 1/2-ounce can red kidney beans
- One 15-ounce can pinto beans
- 1 pound ground chicken
- 8 hot dogs (Bobby likes the ones from The Meat Hook in NYC, but any good-quality hot dogs will work)
- 8 whole wheat hot dog buns
- 1/4 cup shredded Cheddar
- 1/2 cup chopped scallions
- Plain nonfat Greek-style yogurt, for garnish, optional

Directions 1Proof the yeast in 1 cup warm water with 1 teaspoon sugar; let sit for 10 minutes until foamy

- 1 cup warm water
- 1 teaspoon sugar
- 1 tablespoon dry yeast
- 3/4 cup warm whole milk
- 4 tablespoons sugar (for a less sweeter bun reduce to 3 tablespoons)
- 1/4 cup melted Crisco shortening (I use butter flavor)
- 1 1/2 teaspoons salt
- 3 1/2 cups all-purpose white flour (U.S. residents use bread flour, you may need more four start with 3-1/2 cups and add in more while m)
- 1 egg white
- 1 teaspoon water
- 1 tablespoon sesame seed

- 1/4 teaspoon white pepper

- 1 cup all-purpose flour
- 1 1/4 pounds chicken meat, cooked and ground in food processor
- 2 eggs
- 2 cups milk
- 1/8 teaspoon salt
- 3 cups all-purpose flour or cracker meal
- 3 cups bread crumbs
- 3 tablespoons butter
- 2 cups chicken stock
- 3 tablespoons all-purpose flour
- 2 teaspoons chopped fresh parsley leaves
- Pinch white pepper and salt
- Salad oil or liquid shortening, for frying
- Mashed potatoes, for serving
