Magic Lemon Meringue Pie

Preheat oven to 325 degrees F
- 1 1/2 cups fine graham cracker crumbs
- 1/2 cup sugar
- 1/2 stick (1/4 cup) butter, melted
- One 14-ounce can sweetened condensed milk
- 1/2 cup fresh lemon juice (about 2 large lemons)
- 1 teaspoon grated lemon zest
- 3 large egg yolks, whites reserved for meringue
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/4 cup sugar

- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon

- 2 (12-ounce) jars roasted chicken gravy (recommended: Franco American)
- 1 teaspoon crushed garlic

- 6 1/4 lbs. ground beef
- 3 cups chopped onion
- 3 cups chopped celery
- 2 Tbs. mustard
- 1 1/2 Tbs. salt
- 1/2 cup brown sugar
- 4 1/2 cups ketchup
- 1/2 cup vinegar
- 3 cups water
Black Eyed Pea Broccoli Cheese Soup

Steam or boil broccoli until tender
- 1-1/2 pound fresh broccoli
- 2 cups water
- 3/4 teaspoon salt
- 1/2 cup Cornstarch
- Mix With
- 1 cup Cold Water
- 1 pint half and half
- 1 pound Velveeta
- 1/2 teaspoon pepper
Spicy Rice Meatballs

In a large bowl, mix together all ingredients except wheat germ and vegetable oil
- 2 cups cooked long grain rice (white or brown)
- 1/2 cup quick cooking oats, ground
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, minced
- 1/3 cup dry bread crumbs
- 1 tablespoon whole wheat flour
- 2 eggs, beaten
- 1/3 cup milk
- 2 Tbsp. flaxseed, ground
- 1 tsp. dried basil leaves
- 1 tsp. dried oregano leaves
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 1/8 tsp. white pepper
- 1/2 cup wheat germ
- 2 Tbsp. vegetable oil, if frying

- 3 medium ripe avocados (recommended: Hass), halved, pitted, peeled and chopped
- 1 clove garlic, minced
- 1 medium ripe red tomato, seeded and coarsely chopped
- 1 lime, juiced
- 1 lemon, juiced
- 2 green onions, thinly sliced
- 1/4 cup finely chopped fresh basil leaves
- 1 tablespoon crushed red pepper flakes, or to taste
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper

- 1 T mustard

- 1 t thyme
- 5 qts. cooked beans--lima, kidney, pinto, black, navy, etc.--whatever is on hand (I cook dry beans ahead of time and have ready for recipes in my freezer)
