Bisquick Mix Substitute

This recipe appeared in the Kansas City Star food section some years ago
- 6 cups all-purpose flour
- 3 tablespoons baking powder
- 1 tablespoon salt
- 1 cup vegetable shortening
Bacon Cream Cheese Roll-Ups

Cut the crust off of the bread
- 10 slices of bread (white sandwich bread)
- 15 slices of bacon
- 4 oz light cream cheese
- 30 wood toothpicks

- 2 tablespoons onions, finely choped
- 1 -2 teaspoon curry
- 1 teaspoon oil
- 1 cup parboiled rice
- 2 cups chicken broth
- 1/2 teaspoon salt
Chicken & Rice Bake without Canned Soup

My version of my Mom's chicken & rice without the canned cream of mushroom soup or Lipton dried onion soup
- CREAM SOUP SUBSTITUTE:
- 1/3 cup powdered milk
- 2 tablespoon cornstarch
- 1 teaspoon dried onion flakes
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- LIPTON ONION SOUP SUBSTITUTE:
- 1/4 cup dried onion flakes
- 2 tablespoons beef bouillon granules
- 1 teaspoon dried minced garlic
- 1/4 teaspoon parsley flakes
- 1/8 teaspoon paprika
- 1/8 teaspoon pepper
- ADDITIONAL INGREDIENTS:
- 3 cups water (or use chicken stock instead of water and chicken soup base)
- 1 teaspoon chicken soup base or bouillon granules
- 1 cup uncooked white rice
- 6 chicken thighs, skinless (feel free to use your favorite chicken parts or a cut up whole chicken)
- 1 teaspoon paprika

This is a recipe that is higher in fiber and slightly lower in fat than most of the ones already posted
- 4 cups whole wheat pastry flour
- 4 cups white flour
- 1 cup nonfat dry milk powder
- 2 teaspoons cream of tartar
- 1/4 cup baking powder
- 2 1/2 teaspoons salt
- 3/4 cup shortening
Blueberry Baked Oatmeal

- 2 cups uncooked old-fashioned oatmeal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup unsweetened applesauce
- 1/2 cup sugar
- 1 cup frozen blueberries or blackberries
- 1/2 teaspoon dried lemon peel
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts
- 2 tbsp ground flax
- 1 tsp cinnamon

Pumpkin Cornbread

Directions Preheat the oven to 400 degrees and coat your 8×8 inch glass baking dish in cooking spray
- 1 cup white whole wheat flour
- 1 cup cornmeal
- 1/2 cup sugar
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1 tsp cinnamon
- 1 cup unsweetened pumpkin puree
- 1/4 cup unsweetened applesauce
- 2 eggs, beaten
Balsamic Baked Chicken

- 6 boneless chicken thighs
- 1/4 cup balsamic vinegar
- 1 tablespoon extra light olive oil
- 1 tbsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp fresh ground black pepper
Sweet Apple Fritters

In a large bowl, beat eggs with milk, salt and sugar
- 2 eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup flour
- 1/2 teaspoon baking powder
- 4 apples
- 1 lemon, cut in half
- 1 1/2 tablespoons canola oil or vegetable oil
- cinnamon-sugar mixture
Amish Baked Oatmeal

Coat 8×8 baking dish or pie plate with cooking spray
- 1/4 cup butter, melted
- 2 eggs, beaten
- 3/4 cup brown sugar
- 1 1/2 tsp baking powder
- 1 1/2 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup milk
- 2 tbsp milk
- 3 cups oatmeal (old fashioned or quick)
- 1/2 cup walnuts or pecans, chopped (optional)
