Balsamic Eggplant Pasta Salad

Bring a large pot of water to a boil
- 1 lb farfalle or fusilli pasta (bow tie or spirals)
- 1/3 cup extra virgin olive oil
- 1 medium eggplant, cut into 1/2-inch cubes
- 1 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 1 medium yellow squash, sliced and quartered
- 1/2 red onion, thinly sliced and then chopped
- 1 pint grape tomatoes
- 8 oz fresh mozzarella, small balls or cut into cubes
- 1/2 cup flat leaf parsley, chopped
- 2 cups mixed greens
- 1/4 cup balsamic vinegar

- 4 cups fat free chicken broth or 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 small onion, chopped
- 3/4 cup pearl barley, sorted and rinsed
- 1/3 cup white wine
- 8 ounces portabella mushrooms or 8 ounces white button mushrooms, sliced
- 2 tablespoons chopped shallots
- 2 tablespoons chopped fresh basil
- salt and pepper
- 3 tablespoons parmesan cheese

- 1 unbaked deep-dish pastry shells (9 inches and I use a store-bought one for this)
- 4 cups fresh mushrooms, sliced
- 1/2 cup onion, diced
- 1/4 cup sweet red pepper, diced
- 1 tablespoon butter
- 1 cup shredded cheddar cheese
- 2 tablespoons all-purpose flour
- 1 1/4 cups milk
- 4 eggs, lightly beaten
- 1 -2 tablespoon minced fresh savory (or 1-2 t dried savory)

- 1/2 teaspoon cayenne pepper
