Carrot Muffins with Vanilla Icing

Preheat Oven 350 degrees: Place carrots in food processor and process until smooth
- Ingredients:
- 1 1/2 cups flour
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3 eggs
- 1 1/4 cups sugar
- 1/4 cup vegetable oil
- 1/2 tsp. vanilla
- 1/2 lb. carrots, cooked
- ICING:
- 4 tbs. butter
- 2 cups confectioners’ sugar
- 2 tbs. cream
- Pinch of salt
Chicken Scampi Risotto

- 2 lbs boneless chicken breasts, cut into small strips
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup grated romano cheese or 1/4 cup parmesan cheese
- 1 onion, chopped
- 9 tablespoons olive oil (divided)
- 1 tablespoon minced garlic
- 2 cups arborio rice
- 1/2 cup white wine
- 4 -6 cups chicken broth (heated with juice of 2 lemons)
- 4 tablespoons butter
- 1/2 cup grated romano cheese or 1/2 cup parmesan cheese
- 1/4 cup parsley, chopped
Baked Whole Wheat Pancake Squares

To get started, preheat your oven to 350 degrees and melt the butter
- 3/4 cup milk
- 2 tbsp. melted butter
- 1 large egg
- 1 tbsp. sugar
- 1/2 cup all-purpose flour
- 1/2 cup whole wheat white flour (or use all white flour if you prefer)
- 2 tsp. baking powder
- 1/4 tsp. salt
- cooking spray

- 6 Avocados (soft, but not mushy)
- 2 -4 garlic cloves, minced (depends on how much you like garlic)
- 1 lime, cut in half
- 1 medium Tomato, diced
- 1/2 medium onion, diced

Garlic Lemon Brussels Sprouts

Heat the olive oil in a saute pan over medium low heat
- 2 tbsp olive oil (I use light olive oil)
- 2 large garlic cloves, minced
- 3/4 lb Brussels sprouts
- 1/4 tsp lemon pepper
- 1/4 tsp Kosher salt
- 1 tsp lemon zest
