Poppy Seed Almond Whole Wheat Muffins

Preheat oven to 350°F. Generously spray your muffin tin with cooking spray, or use cupcake liners
- 1 cup all-purpose flour
- 1 cup unbleached white whole wheat flour
- 3/4 cups sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cups milk
- 1/2 cups vegetable oil
- 1/2 cup applesauce
- 2 eggs
- 1 teaspoon almond extract
- 1 tablespoon poppy seeds
Jewish Passover Charoset

Chop apples into very small pieces and mix with nuts
- 1/2 cup pecans or walnuts, chopped
- 1 apple, peeled and chopped
- 2 tablespoons concord red wine (or grape juice)
- 1/4 cup dried sweetened cranberries (optional)
- cinnamon to taste
Barley Mushroom Bake

This is a great "instead of potatoes" sidedish that I've served for years
- 1 cup medium pearl barley
- 4 tablespoons butter
- 1 large yellow onion, minced
- 1 cup coarsely chopped mushroom
- 3 cups beef broth (depending on what meat is served with this) or 3 cups chicken broth (depending on what meat is served with this)
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
Herbed Corn for a Crowd

First, put the frozen corn and water into a pot and bring the water to a boil
- 32 ounces frozen corn
- 2 cups water
- 2 tablespoons butter, cubed
- 1 tablespoon minced fresh parsley
- 1 teaspoon Kosher salt
- 1/2 teaspoon dill weed
- 1/4 teaspoon garlic powder
- 1/4 teaspoon Italian seasoning
- 1/8 teaspoon thyme

- 1/4 cup grenadine
- 4 lemons
- 4 cups ice cubes
- 1 1/4 liters lemon soda
- 1/4 cup pomegranate seeds
