Apple-Prune Squares

A dessert that tastes good and is guilt-free. Forget all the jokes you’ve heard about prunes…these cookie-bars are good.

Ingredients
- 1 large egg
- 3/4 cup packed brown sugar
- 2 tbsp vegetable oil
- 1 tsp vanilla extract
- 1/2 cup chopped pitted, orange-essence prunes. (If you can’t find these, regular prunes will suffice, but the orange-essence prunes really make these bars stand out)
- 1 cup unbleached all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup chopped, unpeeled apple (1 small apple, or less)

Preparation
Step 1
Preheat the oven to 350 F and coat an 8” square pan with nonstick cooking spray.
Beat the egg, brown sugar, oil, and vanilla in an electric mixer until smooth.
Toss the prunes with the flour to keep them from sticking together. Stir the prunes, flour, baking powder, salt, and chopped apple into the batter by hand. Spread the batter in the pan.
Bake for about 30 minute or until a toothpick inserted in the center of the pan comes clean. Cool in the pan and then cut into 16 squares.
