Separate eggs. Beat egg whites stiff
- Filling:
- 6 eggs
- 1 cup sugar
- 1 cup oil
- 1/4 cup boiling water
- Rind of 1 lemon
- Juice of 1 orange
- 5 to 6 cups flour
- 4 heaping tsps baking powder
- 2 —3 lb. Prunes
- 1 lb. raisins
- 1 cup walnuts (optional)
- Rind of 1/2 lemon
- Sugar to taste if necessary
- Dates (optional)
Steak Dinner, Italian Style

After grilling flank steak, slice and serve over salad
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 1 large garlic clove
- 1/2 teaspoon thyme leaves
- 2 1/2 lbs flank steak
- salt and freshly ground pepper
Grilled vegetables with red pepper sauce

Light and healthy with easy to make dipping sauce
- 8 plum tomatoes cored and halved (1 1/2 pounds)
- 4 medium sized zucchini, sliced in half lengthwise
- 2 sweet red peppers, cored, seeded and quartered
- 2 yellow peppers, cored, seeded and quartered
- 1 pound of asparagus, ends trimmed
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon black pepper
- 1 jar (24 ounces) roasted red peppers, drained and chopped
- 1 small onion, chopped
- 1 tablepoon balsamic vinegar
- 1 tablespoon Italian seasoning
- 1/3 cup marinara sauce
Pumpkin Bread

- 3 cups sugar
- 4 eggs
- 2/3 cup water
- 2 cups canned pumpkin (1 small can)
- 1/2 tsp baking powder
- 2 tsp baking soda
- 1.5 tsp salt
- 1 tsp each cloves, cinnamon, nutmeg (or 3 tsp pumpkin pie spice)
- 1 cup cooking oil
- 3.5 cups flour (or 437.5 grams, if, like me, you can never remember which way you're really supposed to measure flour!)
Creamy Chicken and Corn Pot Pie

- 1 2 to 2 1/2 lb rotisserie chicken, meat shredded
- 2 14.5 ounce cans corn chowder
- 1 cup frozen peas
- 1 cup frozen corn kernels
- 2 teaspoons fresh thyme leaves
- kosher salt and black pepper
- 1 sheet frozen puff pastry (from 17.3-ounce package) thawed
