West African Peanut Soup

In a medium Dutch oven or stock pot, bring the broth to a boil
- 6 cups low sodium vegetable broth
- 1 medium red onion, chopped
- 2 tablespoons peeled and minced fresh ginger
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 bunch collard greens (or kale), ribs removed and leaves chopped into 1-inch strips
- 3/4 cup unsalted peanut butter (chunky or smooth)
- 1/2 cup tomato paste, or 1 cup canned crushed tomatoes*
- Hot sauce, like sriracha (AKA rooster sauce)
- 1/4 cup roughly chopped peanuts, for garnish
Amaretto-Glazed Pear Shortcake

So simple to prepare, yet so elegant and delicious
- 1 3/4 cups all-purpose flour
- 1/2 cup plus 2 tablespoons sugar
- 1 3/4 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons salted butter, cut in six pieces
- 3/4 cup milk (2% is fine)
- 16-ounce can of sliced Bartlett pears in syrup, reserve 1/4 cup syrup
- 1/2 tablespoon Amaretto liquor (or more, to taste)
- 1 teaspoon cinnamon
Pecan Candy

Mix all ingredients except pecans and vanilla in a large saucepan and bring to a boil
- 2 cups Sugar
- 1/2 tsp Salt
- 1 cup Milk
- 1/4 tsp Soda
- 1 cup Chopped Pecans
- 2 Tbsp Butter
- 2 Tbsp White Corn Syrup
- 1 tsp Vanilla Extract
Watermelon Mojito Granita

Serves 8-10 Remove rind from melon and cut into 1 1/2" chunks
- 4 lbs. piece seedless watermelon
- 1/2 C caster sugar
- 1/4 C lime juice
- 2 tablespoons Bacardi Limon rum
- 1/2 C chopped fresh mint

Combine all dressing ingredient Marinate chicken in 2 tablespoons dressing for 30 minutes
- 2 half chicken breasts, skinned and boned
- 1 tablespoon vegetable oil Crisp lettuce leaves
- 1 small cucumber, sliced
- 1 orange, peeled and sliced
- 2 clusters seedless grapes
- 1/2 red bell pepper, sliced
- 1 banana, peeled and sliced
- Peanut dressing
- 1/4 cup orange juice
- 2 tablespoons peanut butter
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon grated ginger root
- 1/2 teaspoon garlic powder 1/8 teaspoon crushed red pepper flakes
Apple Cider Indian Pudding

In the top of a double boiler set over simmering water scald 1/2 cup of the milk
- 1 cup milk
- 2/3 cup yellow cornmeal
- 3 cups unpasteurized apple cider
- 1 large egg, beaten lightly
- 1/2 cup firmly packed light brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1/2 stick (1/4 cup) unsalted butter, cut into bits
