Hummingbird Cake

A classic southern cake filled with banana, pineapple, and pecans, and topped with a thick cream cheese icing
- 3 3 3 cups all-purpose flour, sifted
- 2 2 2 cups sugar
- 1 1 1 teaspoon salt
- 1 1 1 teaspoon baking powder
- 1 1 1 teaspoon baking soda
- 1 1 1 teaspoon ground cinnamon
- 1/4 1/4 1/4 teaspoon allspice
- 1 1/3 1 1/3 1/3 cups vegetable oil
- 2 2 2 teaspoons vanilla extract
- 3 3 3 large eggs, lightly beaten
- 1 3/4 1 3/4 3/4 cups very ripe banana, mashed
- 2 2 2 cups toasted chopped pecans, divided
- 1 1 can 1 (8-ounce) can crushed pineapple, undrained
- 1 1 1 cup butter, softened
- 6 6 6 cups powdered sugar
- 2 2 2 teaspoons vanilla extract
- pinch pinch of salt
- 2 2 1-ounce 2 (8-ounce) packages cream cheese, cut into 1-ounce pieces and chilled
Mamaw's Cinnamon Rolls

- •1 1/2 cup brown sugar packed
- •1 cup butter softened
- •1/4 cup cinnamon
- Cream Cheese Icing
- •1/2 cup cream cheese softened
- •1/2 cup butter softened
- •2 cups confectioners' sugar
- •1 tsp vanilla extract
Roasted Shrimp Scampi

1. Heat the oven to broil
- 2 pounds medium (26/30) shrimp, peeled, deveined, and tails removed
- 1/2 cup unsalted butter
- Coarse kosher salt and freshly ground black pepper
- 4 cloves garlic, very finely minced
- Dash of crushed red pepper flakes, optional
- 1 lemon, zested and juiced, about 3 tablespoons juice
- 1/4 cup dry white wine
- 3 tablespoons finely chopped Italian parsley
- Lemon wedges, to serve

This recipe also works good for dinner with a salad
- Egg Mixture:
- 8 slices buttered bread, torn
- 1 pound cubed ham or cooked sausage
- 2 lbs. cheddar cheese, shredded (you can mix in some Colby or jack)
- 5 large eggs
- 3 cups half and half, or milk
- 1 tbsp. Worcestershire sauce
- 1 tbsp. dry mustard
- Salt and pepper to taste
French Toast Bake

1. Melt butter in microwave and add brown sugar
- 1/2 cup melted butter (1 stick)
- 1 cup brown sugar
- 1 load of thickly sliced bread
- 4 eggs
- 1 1/2 cups milk
- 1 teaspoon vanilla
- Powdered sugar for sprinkling
- Cinnamon for sprinkling
Chocolate Dipped Candy Corn Krispie Treats

1. In a large pot over medium heat, melt the butter
- ◾6 cup crispy rice cereal
- ◾6 cup mini marshmallows
- ◾5 tbsp butter
- ◾ orange gel coloring
- ◾ dark chocolate candy coating
- ◾ white chocolate candy coating
Almond Butter Cookies

1. Heat oven to 400 degrees F
- COOKIE:
- 1 1 1 cup butter, softened
- 3/4 3/4 3/4 cup sugar
- 1 1 1 tsp. almond extract
- 2 2 2 cups all-purpose flour
- 1/2 1/2 1/2 tsp. baking powder
- 1/4 1/4 1/4 tsp. salt
- GLAZE:
- 1/2 1/2 1/2 cup real semi-sweet chocolate chips
- 2 2 2 tsp. shortening
Italian Mussels & Pasta

1. Bring a large pot of water to a boil
- 8 ounces whole-wheat linguine or spaghetti
- ¼ cup extra-virgin olive oil
- 2 large cloves garlic, chopped
- 1 15-ounce can crushed tomatoes with basil
- Big pinch of saffron threads (see Note), soaked in 2 tablespoons water or white wine
- 2 pounds mussels, cleaned (see Tips)
- ¾ cup dry white wine
- Big pinch of crushed red pepper
- ¼ teaspoon salt
- Freshly ground pepper to taste
- ¼ cup chopped fresh parsley
- 1 tablespoon finely grated lemon zest (see Tips)
Classic Sangria

Pour wine into large pitcher
- 1 750-ml bottle red wine
- 1 lemon, cut into wedges
- 1 orange, cut into wedges
- 1 lime, cut into wedges
- 2 tsp sugar
- 1 1/2 oz brandy
- 2 cups seltzer
Strawberry Yogurt Shake
