Simple Blueberry Muffins

Preheat oven to 425 degrees
- 2 cups sifted all-purpose flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 1/4 cup sugar
- 2 eggs, well beaten
- 3/4 cup milk
- 1/3 cup melted butter
- 1 cup blueberries
- 3 tablespoons flour
CHEESY SPINACH BAKE

- 2 (10 oz.) boxes frozen spinach, thawed and chopped
- 1/2 (10.75 oz.) can condensed cream of mushroom soup
- 1 cup sharp cheddar cheese, grated
- 3/4 cup gruyere or swiss cheese, grated
- 1 egg
- 2 teaspoons Dijon mustard
- 1/2 teaspoon garlic powder
- kosher salt and freshly ground pepper, to taste

- 1 1/2 tablespoons kosher salt
- 1 cup thinly sliced sweet onion
- 1 cup (198 grams) granulated sugar
- 1 cup (240 ml) white vinegar
- 1/2 cup (120 ml) apple cider vinegar
- 1/4 cup (50 grams) light brown sugar

Zucchini Pizza Casserole (Beef)

Shred zucchini. Mix the zucchini with 2 eggs, parmesan cheese, 2 oz
- 4 cups shredded zucchini (about 5 small zucchini’s)
- 1/2 tsp. salt
- 2 eggs
- 2 tbsp. parmesan cheese
- 2 oz. cheese (I used mozzarella and cheddar)
- 1 tsp. italian seasoning
- 1 lb. ground beef
- 2 oz. pepperoni, chopped
- 1 medium onion, chopped
- 2 cups spaghetti sauce
- 1 medium bell pepper, chopped
- 4 oz. cheddar or mozzarella cheese (or a mix of both)
Cherry Bars

Preheat oven to 350°F. Grease a 10x15x1-inch baking pan lightly with butter
- Bars:
- 1 cup butter, at room temperature
- 2 cups granulated sugar
- 1 teaspoon salt
- 4 eggs
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 3 cups all purpose flour
- 2 cans (21 ounces each) cherry pie filling
- Glaze:
- 1 cup confectioners' sugar
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon almond extract
- 2 to 3 Tablespoons milk
- Makes about 5 dozen bars
Crock Pot Chicken and Noodles

Salt & pepper chicken breasts and place in the bottom of crock pot
- 1 24 ounce package – frozen egg noodles
- 2 – 14.7 oz cans – cream of chicken soup – sometimes i use 1 can chicken and 1 can cream of celery
- 1 stick (1/2) cup butter – cut into pieces
- 1 – 32 oz chicken broth – may want extra to thin out, if too thick. the frozen noodles thicken the broth
- mixed vegetables – optional – i didn’t use this time
- Chicken buillon to taste – optional – i add about a teaspoon of better than buillion chicken flavored paste – for a richer chicken flavor
- 6 small boneless, skinless chicken breasts or 4 large
- salt & pepper to taste – can add some parsley too if desire
SUN-DRIED TOMATO FETTUCCINE

Bring a large pot of salted water to boil and cook fettuccine according to packing instructions, or until al dente
- 1 pound fettuccine pasta
- 1 (14.5 oz.) can diced tomatoes, drained
- 2/3 cup heavy cream
- 1/2 cup half-and-half
- 1/2 cup parmesan cheese, grated
- 1/2 cup sun-dried tomato halves
- 5 cloves garlic, minced
- 3 tablespoons tomato paste
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoons crushed red pepper flakes
- kosher salt and freshly ground pepper, to taste

- 1 tablespoon apple cider vinegar
- 1 tablespoon Sriracha sauce
- 1 tablespoon cornstarch + 1 tablespoon water (whisk together to make a slurry)
- 1 - 2 tablespoons canola oil
- 2 teaspoons jarred minced garlic
- 1 teaspoon jarred minced ginger

Italian Meatloaf

- 1/2 lb. ground mild Italian sausage
- 1 small onion, finely chopped
- 1/2 C. chopped bell pepper (I used orange, it was all I had in the freezer)
- 1 tsp. olive oil
- 1 tsp. Worcestershire sauce
- 1 clove garlic, minced
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. parsley
- 1 egg, beaten
- 3/4 C. Italian bread crumbs
- 2 slices white bread, crumbled
- 1 T. milk
- 8 oz. shredded mozzarella cheese, reserve 3/4 C. for topping
- 1/4 C. parmesan cheese
- 1 C. marinara sauce, plus 1/2 -3/4 C. more for topping
