Farmer's Tomato Pie

A bite of this pie matches the bliss of eating a warm-from-the-garden tomato
- 1 unbaked piecrust
- 1 1/2 cups shredded Italian blend cheese or shredded mozzarella cheese
- 4 cloves of garlic, minced
- 2 Tbl fine dry bread crumbs
- 2-3 lbs of ripe tomatoes, sliced or cut into small wedges
- 1/2 tsp salt
- 1/4- 1/2 cup loosely packed fresh basil leaves or
- 1/4 cup shredded basil leaves
- Grated cheese
Chickpea Salad

Cut avocado into cubes and place in bowl
- 1 avocado
- 1/2 fresh lemon
- 1 can chickpeas , drained (19 oz)
- 1/4 cup sliced red onion
- 2 cups grape tomatoes , sliced
- 2 cups diced cucumber
- 1/2 cup fresh parsley
- 3/4 cup diced green bell pepper
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon cumin
- salt & pepper
French Onion Chicken

Preheat oven to bake at 400 degrees OR broil on low
- 2 2 2 medium yellow onions, thinly sliced into rings
- 3 3 3 tablespoons butter
- 1 1 3 cup plus 3 tablespoons beef broth, divided
- 4 4 to boneless skinless chicken breasts, pounded to even thickness
- 1 1 1 tablespoon oil
- to and pepper to taste
- 1 1 1/4 1/4 1/2 blend herbs/Italian seasoning (OR 1/4 teaspoon dried basil + 1/4 teaspoon dried thyme + 1/2 teaspoon dried oregano)
- 2 2 2 tablespoons flour
- 4 4 4 slices provolone cheese
- 4 4 4 slices swiss cheese
- 3/4 3/4 3/4 cup parmesan cheese
- fresh thyme or parsley and cracked black pepper for topping (optional)
Chicken Francese

I believe this dish was created in America by Italian immigrants
- 2 chicken breasts
- Half cup plain flour
- 2 eggs
- 1 handful of fresh parsley
- 50 g - 2oz Parmesan cheese
- 1 cup white wine
- 1 cup chicken stock
- 1 garlic cloves
- 4 tbsp olive oil
- 4 tbsp butter
- Half lemon
- Salt and pepper
Cranberry-Orange Shortbread Cookies

Line a baking sheet with parchment paper and set aside
- 1/2 cup dried cranberries (Craisins)
- 3/4 cups sugar, divided
- 2 1/2 cups all purpose flour
- 1 cup butter, cubed (and cold)
- 1 tsp almond extract
- zest of 1 orange
- 1 to 2 tbsp of fresh orange juice (otional)
- additional sugar to coat cookies before baking if desired

For the crust Preheat oven to 350 degrees Fahrenheit
- For the crust
- 1/2 cup unsalted butter (1 stick), melted
- 1/2 cup brown sugar (104 grams)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour (157 grams)
- 1/4 teaspoon salt
- For the filling
- 1 1/2 cup semi-sweet chocolate chips
- 1 cup sweetened shredded coconut
- 3/4 cup sweetened condensed milk
- 1 cup salted caramel sauce
- 1 cup semi-sweet chocolate chips, melted (for drizzling on top after pie is done)
Bloomin' Baked Apple

- 2 Honeycrisp apples (or other crisp apples)
- 2 tbsp butter
- 3 tbsp brown sugar, packed
- 1 tbsp flour
- 1 tsp cinnamon
- 4 caramels
- Optional toppings: vanilla ice cream, caramel sauce and cinnamon

- 1 cup brown sugar (*You may wish to reduce the amount of sugar used to 2/3 cup.)
