Roasted Vegetables

Preheat oven to 475 degrees F (245 degrees C)
- 1 small butternut squash, cubed
- 2 red bell peppers, seeded and diced
- 1 sweet potato, peeled and cubed
- 3 Yukon Gold potatoes, cubed
- 1 red onion, quartered
- 1 tablespoon chopped fresh thyme
- 2 tablespoons chopped fresh rosemary
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- salt and freshly ground black pepper

- 6 large kale leaves
- 1 celery stalk
- 1 large carrot
- 1 small garnet yam (aka orange sweet potato — peeled)
- 2 green apples
- 1/2 lemon (outer peel removed but most of the white pith intact)
- 1/2 cucumber (peeled)
- Handful of blueberries
- 1 inch piece of ginger root

2. Rub dry mix in to ribs and marinate in refrigerator overnight
- Procedures:
- Pork Ribs 2 Racks
- Rib Rub 4 TBL
- Apple juice 8 oz
- Memphis original BBQ 1 cup
- 1 . Evenly distribute rub over both sides of ribs.
- 2 . Rub dry mix in to ribs and marinate in refrigerator overnight.
- 3 . Heat grill to 200 degrees with desired pellets.
- 4 . Place ribs in center of grill and cook for 5 hours.
- 5 . Place a shallow foil pan on the grill and add apple juice.
- 6 . Brush both sides of ribs with 1 oz of sauce. Repeat this process every fifteen minutes until done.
- 7 . Shut cover to grill and cook for one more hour.
- 8 . Cut ribs into desired portion and serve.

- Kosher Salt 4 oz
- Brown Sugar 4 oz
- Chil Powder -mild 2 oz
- Granulated onion .5 oz
- Granulated Garlic .5 oz
- Black Pepper-coarse .5 oz
- Cumin-ground .5 oz
- Coriander-ground .5 oz
- Chipotle Powder 1 tsp
- Fennel Seeds .5 oz
- Procedures:
- 1 . Place all ingredients in mixing bowl and toss to combine.
- 2 . Place in airtight container until needed.

A heartier, more healthy version of V-8
- Spinach – 9 oz. = 3 good handfuls
- Carrots with tops removed – 8 oz. = 2 large
- Beet Root – 1 oz. = 1/8 of a large root
- Green Onion – 1 (including green and white part)
- Celery – 4 oz. = 1 1/2 sticks
- Italian Parsley - 2 oz. = handful
- Tomato – 16 oz. = 2 super large tomatoes
- Add 1/2 teaspoon of tajin Clasico Seasoning to the mix.
Lobster and Shrimp Cioppino

PreparationMake Stew Base: Bring large pot of water to boil
- 2 1 1/3- to 1 1/2-pound live lobsters
- 2 pounds uncooked large shrimp with shells
- 1 1/4 cups olive oil
- 2 medium onions, chopped
- 1 cup chopped celery
- 1 cup chopped fresh fennel bulb
- 12 garlic cloves, peeled, flattened
- 1/4 cup tomato paste
- 1 28- ounce can plus 2 cups diced tomatoes in juice
- 1 bunch fresh basil
- 4 large fresh thyme sprigs
- 4 large fresh parsley sprigs
- 2 large fresh oregano sprigs
- 2 bay leaves
- 1 teaspoon dried crushed red pepper
- 4 8-ounce bottles clam juice
- 2 cups dry white wine
- 3 pounds red snapper fillets
- 16 large sea scallops
- 1 pound large lump crabmeat (optional)
- 1/2 cup all purpose flour
- 6 tablespoons olive oil
- 3 tablespoon unsalted butter
- 6 tablespoons chopped fresh parsley

Guy Fieri's Tequila-Lime Wings

Directions Prepare the wings: Preheat the oven to 350 degrees F
- 3 pounds chicken wings, split at the joint, tips removed
- Kosher salt and freshly ground pepper
- 1 teaspoon grated lime zest
- 1/2 cup fresh lime juice
