Crispy Sticky Baked Chicken Wings

Wonderfully sticky, crispy chicken wings
- 2 1/2 lbs chicken wings tips removed and drumettes and flats separated
- 1 Tbsp vegetable oil
- 1 Tbsp Chinese 5 spice
- pinch salt and pepper
- dash cayenne pepper
- 1/3 cup Hoisin sauce
- 1/4 cup blackberry jam or preserves

Directions In a large bowl add the bread slices and milk
- 1 pound stale country-style bread, crusts removed and cut into thick slices
- 1 1/2 cups milk
- 3 large eggs
- 1/2 cup grated pecorino or Parmigiano-Reggiano
- 1/2 bunch Italian parsley, leaves chopped to yield 2 tablespoons
- 1 bunch basil, leaves chopped
- 1 clove garlic, thinly sliced

- 1/4 cup extra-virgin olive oil
- 1 Spanish onion, cut into 1/4-inch dice

- 3 tablespoons chopped fresh thyme leaves, or 1 tablespoon dried
- 1/2 medium carrot, finely shredded
- 2 (28-ounce) cans peeled whole tomatoes, crushed by hand and juices reserved

- 1 pound fresh lump crabmeat, picked over for shells and cartilage

- 20 jumbo shrimp (about 2 pounds), shelled, leaving tail and connecting shell segment, deveined, and butterflied lengthwise
- 2 tablespoons olive oil
- 1 tablespon chopped garlic
- 1 teaspoon crushed red pepper
- 1/2 pound kale, chiffonade
- Salt and freshly ground black pepper
- Chopped parsley, garnish
