Chicken Satay

1. Make the satay: In a medium bowl, mix the yogurt with the curry powder, cumin, coriander and cayenne to combine
- 1 cup yogurt
- 2 teaspoons curry powder
- 1 tablespoon cumin
- 2 teaspoons coriander
- Pinch of cayenne pepper
- 1 1/2 pounds chicken strips
- 1 package pre-soaked bamboo skewers (see Finishing Touches)
- 2 tablespoons cilantro, for garnish
- 2 tablespoons scallions, for garnish
- COCONUT-PEANUT SAUCE
- 1 cup natural peanut butter
- 1/2 cup coconut milk
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- 2 garlic cloves
- One 1/4-inch piece fresh ginger
- 2 tablespoons chile paste
- Chopped salted peanuts, for garnish
Quinoa Tex Mex

A one-dish, slow-cooker tex mex quinoa casserole
- 1 and 1/2 cups quinoa, well rinsed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained (I used Hunt's)
- 1 can (15.25 ounces) corn, drained and rinsed
- 1 cup sweet peppers, chopped
- 1 poblano chili pepper (~3/4 cup), chopped
- 1/2 teaspoon minced garlic
- 1/2 cup yellow onion, chopped
- 2 tablespoons chili powder
- 1 and 1/2 teaspoons ground cumin
- 3 cups water (or chicken broth)
- 1/4 cup cilantro, chopped
- 1 tablespoon fresh lime juice
- 2-4 tablespoons taco seasoning
- 1 and 1/2 cups mozzarella cheese, shredded
- Optional: green onions, salt and pepper to taste
Marinated Tomato & Mozzarella Pasta

1. MIX together tomatoes, bocconcini, basil, vinegar, and oil in serving bowl
- 1 lb grape or cherry tomatoes, halved
- 4 oz bocconcini (about 12 sm mozzarella balls), halved
- 1/2 c torn fresh basil
- 1/4 c red wine vinegar
- 1 1/2 Tbsp extra virgin olive oil
- 1/2 lb penne or rigatoni, preferably whole wheat
- 1 c shredded cooked chicken breast
Best Grilled Brats

Pour two beers into a saucepan, add the 10 brats and sliced onion
- 10 Bratwurst
- 2 cans Beer
- 1 Yellow Onion sliced
- 10 buns
Dark Chocolate Fondue with Fruit Kabobs

In a 1 1/2- or 2-quart slow cooker combine whipped topping and chocolate pieces
- 1 8 ounce container frozen light whipped dessert topping, thawed
- 1 10- or 12-ounce package dark chocolate pieces
- 1/4 cup hot strong coffee
- Strawberry halves; pineapple, apple, or kiwifruit chunks; and/or raspberries
- Hot strong coffee (optional)
Quinoa Minestrone Soup

A gluten-free, dairy-free vegetarian soup
- Nutrition Information Per Serving:
- 1 Tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 medium yellow onion, chopped
- 1 medium yellow squash, chopped
- 1 medium zucchini, chopped
- 2 stalks of celery, chopped
- 20 baby carrots, chopped
- 2 cups of yellow corn kernels (fresh, frozen, or canned)
- 2 cups of tomatoes, diced
- 2 Tablespoons of dried oregano
- 2 Tablespoons of dried basil
- 1/2 Tablespoon of black pepper
- 1-15 oz can of kidney beans
- 1-15 oz can of navy beans
- 1-28 oz can of chopped tomatoes with no added salt
- 2 cup of fresh spinach
- 4 cups of low sodium vegetable broth
- 1 cup of quinoa, uncooked.
- 2 cups of water
- Optional: shredded parmesan and asiago cheese
- Calories: 155 kcal, Fat 2 g, Cholesterol: 0 mg, Carbohydrate: 28 g, Dietary Fiber: 5g, Protein: 8 g, Sodium: 385 mg
Coconut Pops

1. In a medium pot over medium heat, bring the coconut water and sugar to a simmer, stirring to dissolve the sugar
- 1 cup coconut water
- 1/2 cup sugar
- 3 cups coconut milk
- 1/2 teaspoon pure vanilla extract
- 1/4 cup finely shredded coconut
- 1 cup jam or jelly (optional)

Put the quart jar in a pot with three inches of water and bring to a boil as the ingredients in the bottle melt tog...
- You will want to add this to my Balm Recipe after it has cooled for three minutes to keep the integrity of the oils. You mix in a quart jar:
- 4 drops Clary Sage
- 6 drops Ylang Ylang
- 3 Geranium
- 11 Whisper
- 4 Hawaiian Sandalwood
- 6 T White Beeswax
- 1 C of Apricot, Almond or sunflower oil
- 4 T. Organic Coconut Oil
- 1 t. Vitamin E
- 2 T Emu Oil
Ginny Forces Frosting

Beat until creamy
- Beat together:
- 1 cup powdered sugar
- 1 egg white
- Add:
- 1/2 cup shortening
- 1 Tbsp. butter
- 2 tsp. milk
- 1 tsp. vanilla
- 2 Tbsp. flour
- 1 cup powdered sugar
- dash of salt
Chicken Breast Recipes

Prepare as above
- Stir-fry it.
- Poach it.
- to 160°F, 15 chicken breast tender and moist. Bring water to a low boil; for flavor, add garlic, onion, or herbs. Add chicken breast and simmer until thermometer registers 160°F, about 15 minutes.
- Nuggetize it.
- to 425°F. 1 1/2 2" 12 to 15 425°F. Cut 1 1/2 lb chicken breast into 2" nuggets. Dip each into flour, egg, and toasted panko bread crumbs seasoned with salt and pepper. Bake until cooked through, 12 to 15 minutes.
