Mini Carrot Cakes

1. Preheat the oven to 350°
- Carrot Cake
- 1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
- 3/4 cup granulated sugar
- 1 egg
- 1 egg yolk
- 3/4 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon cinnamon
- Pinch of ginger
- Pinch of nutmeg
- 1/2 teaspoon salt
- 1/4 cup whole milk
- 8 ounces carrots, grated (1 1/2 cups)
- 1 cup chopped walnuts, toasted
- Cream Cheese Frosting
- 8 ounces cream cheese, at room temperature
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1 1/2 cups confectioners’ sugar
- 1/2 teaspoon pure vanilla extract
- Toasted chopped walnuts, for topping
- Cinnamon, for topping
Butternut Squash Soup

This easy-to-prepare soup is a favorite
- 1 medium-sized butternut squash, peeled and cut into 1/2-inch pieces (about 3 cups)
- 1 large onion, chopped
- 3 medium cloves garlic, chopped
- 1 TBS chopped fresh ginger
- 1 tsp turmeric
- 1 tsp curry powder
- 1 TBS + 2-3/4 cups chicken or vegetable broth
- 6 oz canned coconut milk
- 2 TBS chopped fresh cilantro
- salt & white pepper to taste
Banana chia seed pudding

- 1 cup coconut cream, you can use coconut milk
- 3 bananas
- 10 dates
- 1 cup chia seeds
- 1 1/2 cup almond milk

Blueberry-Lemon Scones

1. TO MAKE THE SCONES: Heat oven to 400°F
- Scones
- 3 c all-purpose flour
- 1/2 c granulated sugar
- Zest of 1 lemon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 c cold butter, cut into small cubes
- 1 c buttermilk
- 1/4 c unsweetened applesauce
- 1 c fresh or frozen blueberries
- Glaze
- 1 1/2 - 2 Tbsp fresh lemon juice
- 3/4 c confectioners' sugar
No-Bake Cheesecake Bars with Fresh Blueberry Sauce

CRUST Using a food processor, blend graham cracker sheets until turned into crumbs
- CRUST
- 12 graham cracker sheets, blended to make 2 c. of crumbs
- 1/4 c. sugar
- 1/2 c. (1 stick) butter, melted
- FILLING
- 2 (8oz) packages of cream cheese
- 1 c. powdered sugar
- 2 c. (1 pint) of HEAVY whipping cream
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- BLUEBERRY SAUCE
- (adapted from Martha Stewart)
- 2 c. fresh or frozen blueberries
- 1/2 c. sugar
- 1 Tbsp. butter
- 2 tsp. cornstarch
- 1 tsp. vanilla.
doTERRA Countertop & Sink Cleaner

The above cleaner is my absolute most favorite cleaner ever
- Mix 10 drops of Citrus Bliss Oil Blend or Wild Orange Oil with distilled water in a 4 oz glass spray bottle
- You MUST shake before each use. Oil and water will separate from each other.
- OR
- Put 3-5 drops of your favorite citrus oil on a damp towel & use to wipe down counters.
Cauliflower Pilaf, Curried Shrimp & Beets

Cauliflower is the tofu of the vegetable world, absorbing bold flavors while keeping dishes light
- Cauliflower Pilaf
- 2 c coarsely grated raw cauliflower florets
- 1/4 c sliced toasted almonds
- 1/4 c dried currants (we used Sun-Maid Zante Currants)
- 1/4 c diced dried apricots
- 1/4 fresh orange juice
- 2 scallions, thinly sliced
- 2 Tbsp thinly sliced fresh mint
- 2 Tbsp extra virgin olive oil
- 1 tsp grated orange zest
- Curried Shrimp
- 1 lb extra large (16–20 count) wild shrimp, peeled and deveined, with tails
- 1 Tbsp Indian curry paste (hot or medium)
- 1 Tbsp fresh orange juice
- 2 tsp coconut oil
- 1/2 c light coconut milk
- 1 Tbsp thinly sliced fresh basil
- Beets
- 8 cooked peeled baby beets, quartered
- 1 Tbsp butter
