Enchilada Cheese Rolls

After my first batch I did an experiment
- 1/2 cup fat free refried beans
- 8 egg roll wrappers (larger than wonton wrappers – often found in the produce section)
- 8 teaspoons enchilada sauce
- 4 light Cheddar cheese sticks (like cheddar versions of string cheese), each cut in half to make two shorter sticks (such as Weight Watchers brand – recommended!)

Cinnamon Buns
- FOR THE FILLING
- 3/4 cup brown sugar, packed
- 1/4 cup sugar
- 2 teaspoons cinnamon
- 1/4 teaspoon ground cloves
- 1/8 teaspoon salt
- 1 tablespoon unsalted butter, melted
- FOR THE DOUGH
- 2 1/2 cups all-purpose flour
- 3 tablespoons sugar
- 1 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk (or 5 tablespoons cultured buttermilk powder, plus 1 1/4 cups water)
- 6 tablespoons unsalted butter, melted
- FOR THE ICING
- 2 tablespoons cream cheese or unsalted butter, softened (I prefer butter)
- 2 tablespoons buttermilk, or whole milk (1 1/2 teaspoons powder, plus 2 tablespoons water)
- 1 cup confectioners’ sugar
Weight Loss Magic Smoothie

•Combine all ingredients to your blender
- 2 cups Weight Loss Magic Soup (chilled)*
- 1/2 cucumber
- 2 Tbsp. fresh squeezed lemon juice
- 2-3 ice cubes
- 1 Tbsp. Worcestershire sauce (optional)
- 2 drops Tabasco sauce (optional)
- 1/4 tsp. black pepper
Zucchini Pad Thai Noodles "Zoodles"

Shrimp with zucchini noodles
- For the Sauce:

- 2 about 2 medium zucchini
- 2 Tablespoons (30ml) olive oil (divided)
- 1/2 pound (225g) peeled and de-veined shrimp (or what ever protein you prefer)
- 3 large cloves garlic, minced or crushed
- 1/2 red bell pepper, seeded and sliced thin
- 3 green onions, sliced in 1" pieces
- 1 large egg
- 2 about 2 cups (480ml) bean sprouts
- 1/3 cup (80ml) roasted peanuts

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup grated gruyere cheese
- kosher salt, to taste
- fresh ground white pepper, to taste
Low Carb Zucchini Pasta

Cut lengthwise slices from zucchini using a vegetable peeler, stopping when the seeds are reached
- 2 zucchinis, peeled
- 1 tablespoon olive oil
- 1/4 cup water
- salt and ground black pepper to taste
Bourbon Sweet Potato Bisque with Brown Butter Cinnamon Sugar Croutons

Preheat oven to 425 degrees F
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 sweet onion, diced
- 2 garlic cloves, minced
- 1 pinch of red pepper flakes
- 3 tablespoons bourbon
- 2 medium sweet potatoes, peeled and cubed (mine came to about 1.25 pounds, peeled and cubed)
- 2 cups low-sodium vegetable stock
- 2 cups water
- 1/2 cup half and half
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- croutons
- 4 slices whole grain bread, cut into cubes
- 2 tablespoons brown butter
- 1/2 tablespoon granulated sugar
- 1/4 teaspoon cinnamon
Buffalo Wing Hummus

- 1 1/2 cups canned chickpeas, drained and rinsed (reserve 1/4 cup of the liquid from the can)
- 2 cloves garlic
- 2 T tahini
- 2 T fresh lemon juice
- 3/4 t paprika
- 1 T barbecue sauce
- 1 1/2 T Frank’s Red Hot (or similar cayenne pepper sauce)
