Bacon-Potato Soup

Cook bacon in large pot over medium heat, stirring occasionally, until crisp, 5-7 minutes
- 4 slices bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 4 potatoes, peeled and cut into 1” pieces

- 3 c whole milk
- 1 t kosher salt

Combine peppercorns, tarragon and 2 cups vinegar in a small saucepan over medium-high heat
- 1 T black peppercorns
- 10 tarragon sprigs
- 2 c + 3 T white wine vinegar, divided
- 3 large egg yolks
- 1 c unsalted butter, melted and skimmed
- 1 T lemon juice
- 1/2 t kosher salt
- 1/4 t pepper
- 4 large eggs
- 2 English muffins, split and toasted
- 4 slices cured ham (Parma or Serrano)
Spicy Street Corn Salad

Whisk together first 8 ingredients and half the cheese in a large bowl
- 1/2 c mayonnaise
- 1/4 c chopped fresh chives
- 1/4 c chopped fresh cilantro + 1/2 c whole stems
- 1 small jalapeño, seeded and chopped
- 1 T lime zest + 1/4 c fresh juice
- 1 t chili powder
- 3/4 t pepper
- 1/2 t salt
- 6 oz. Citibank cheese, crumbles (1-1/3 c divided)
- 1-15.5 oz. can pinto beans, drained and rinsed
- 3 c corn kernels

- 6 tablespoons olive oil
- 4 garlic cloves, minced
- 2 pounds tomatoes, cores and cut into chunks
- 1 pound dried rigatoni
- 1/2 pound small fresh mozzarella balls
- 1 cup torn or sliced fresh basil leaves
- 1/3 cup chopped fresh chives

Cream butter and sugar. Add eggs, one at a time, then vanilla
- 2 sticks butter (1 c)
- 2 c sugar
- 4 eggs
- 2 t vanilla
- 3 c flour
- 2 t baking soda
