Veggie Reuben Pan-Wiches

Preheat oven to 350. Line 13x9 pan with foil
- 12 3 inch pretzel rolls split
- 2 c fresh baby spinach
- 1 c drained and thinly sliced red bell pepper
- 1/2 c thinly sliced red onion and cucumber
- 1 c well drained sauerkraut or coleslaw
- 6 oz thinly sliced swiss cheese
- 1/2 c thousand island dressing
- 6 T melted butter
- 1 T coarse ground mustard
- 1 t caraway seeds crushed
- 1/2 t minced dried onion
Turkey Muffuletta Pan-Wiches

Preheat oven to 350. Line 13x9 baking dish with foil
- 12 3 inch ciabatta rolls split
- 1 16 oz jar pickled mixed veggies, giardiniera, drained and chopped
- 1 c drained and chopped roasted red bell peppers
- 1/2 c coarsely chopped pimiento stuffed green olives
- 2 T olive oil
- 12 oz thinly sliced deli turkey
- 6 oz thinly sliced mozzarella cheese
- 1/4 c melted butter
- 2 cloves minced garlic
- 1 t dried Italian seasoning crushed
Braised Belgian Endive

Heat skillet over medium. Add prosciutto
- 4 thin slices prosciutto
- 2 T butter
- 1 T olive oil
- 2 cloves garlic minced
- 4 heads Belgian endive halved
- 1/4 c apple cider vinegar
- 1/2 c or 2 oz shredded Gruyere cheese
- 1/2 c toasted chopped walnuts
- 1 T chopped fresh rosemary
Grain Salad with Greens, Cherries and Crispy Bacon

In a medium saucepan bring 3 cups water and the farro to boiling; reduce heat
- 3 c water
- 1 c farro rinsed and drained
- 4 slices bacon
- 5 oz baby kale

- 1 t coarse grain mustard
- 2 oz sliced or crumbled blue cheese

- 3/4 c heavy cream
- 3/4 c packed light brown sugar

- 1 t ground cinnamon
- 1/2 t fine sea salt
- Pie crust
- 1 c heavy cream
- 1/3 c powdered sugar
- 1 1/2 t vanilla
- 1 t ground cinnamon
Nacho Cheese Potato Skins

- 8 small to medium russet potatoes
- 2 T olive oil
- Olive oil cooking spray
- 3/4 c quest from a jar
- 3/4 c grated cheddar
- 1 c store bought pico de Gallo
- 1/4 coarsely chopped pickled jalapeño slices for garnish
- Chopped fresh chives for garnish

Heat a wok or skillet over high heat
- 2 T vegetable oil
- 3/4 c chopped bacon
- 3/4 c chopped white onion
- 3/4 c chopped carrots
- 3/4 c sliced snap peas
- 2 cloves garlic minced
- 3 eggs beaten until blended
- 4 c cooked rice
- 1/4 c oyster sauce
- 4 1/2 t soy sauce
- 2 scallions chopped
