ROLLS - STICKY BUNS

Must rise for 1 1/2 hrs Bun pan
- 1 pkg. dry yeast
- 1/4 C. warm water
- 2 C. flour
- 2 T. sugar
- 1/2 tsp. salt
- 1/4 C. warm milk
- 1 egg, beaten
- 6 T. butter, divided plus more for pan
- 2/3 C. brown sugar, divided
- 2 tsp. ground cinnamon, divided
- 1 T. dark corn syrup
- 36 broken pecan halves
- 1/3 C. chopped pecans
Portiguese Style Chicken and Sausage in Safforn Rice

Heat oil in a large casserole over medium high heat until hot
- ;4 t.crushed saffron threads :
- 3 T. Vegetable oil
- 1 3 to3 1/2-lb. chicken, quartered and patted dry coarsely chopped onions
- Salt and freshly ground black pepper to taste
- 1 oz. Fond de Poulet Gold'" + 2 1/2 cup. hot water
- 1 c. long-grain white rice
- 8 oz. turkey kielbasa, cut into 1/2 inch slices
- 4 c. chopped flat-leaf parsley i
- 1 c. frozen petite peas, defrosted
Thai Basil and Chile Chicken

1. In a bowl, combine the lime juice with the soy sauce, sugar and fish sauce
- 3 tablespoons fresh lime juice
- 2 tablespoons soy sauce
- 1 1/2 teaspoons sugar
- 1 teaspoon Asian fish sauce
- 2 tablespoons peanut oil
- 1 pound skinless, boneless chicken breasts, cut into strips or chunks
- 3 garlic Cloves, minced
- 8 scallions, cut into 1/2-inch lengths
- 4 plum tomatoes, chopped
- 1 Thai or bird Chile, minced
- 1 cup coarsely chopped Thai basil
- Steamed rice, for serving
POTATO CHIPS WITH SMOKED SALMON AND ONION HERB CREAM

1. Mix sour cream and cream cheese together until smooth
- 8 ounces sour cream
- 6 ounces cream cheese, softened
- 1/2 medium red onion, minced
- 2 tablespoons chopped fresh dill
- 4 ounces smoked salmon, minced
- 1 bag lightly salted high-quality crinkled potato chips, such as Kettle chips
- chives for garnish

1. Squeeze the juice from a good orange into a cup, straining out the pulp - about 1/3 C
- 1/3 C. juice from a good orange
- 1/3 C. water
- 1 tsp. oil
- 2 C. flour
- 1 large beaten egg
- Cinnamon sugar
ROTISSERIE GRillED CORNISH HENS STUFFED WITH FRESH HERBS AND GOAT CHEESE

Rinse hens inside and out and pat dry
- 4 one-pound Cornish hens
- Vegetable oil
- Salt and freshly ground black
- pepper to taste
- 2 large fresh lemons, juiced
- 1 tablespoon each fresh chopped parsley, sage thyme, and rosemary
- 1/2 pound goat cheese
- 1 cup canned chicken broth
Piquillo Peppers Stuffed with Herbed Goat's Milk Cheese

Preheat oven to 350 degrees
- 12 Piquillo peppers
- 9 oz. herbed goat's milk cheese
- 6 oz. spicy garlic butter
- 2 oz. upland cress
NEAPOLITAN DOUGH

Combine water and yeast. Proof until foamy, 5-8 min
- COMBINE:
- 1 1/2 cups warm water (105-115°)
- 1 t. active dry yeast (half of a 1/4-0Z. package)
- MIX WITH:
- 3 cups all-purpose flour
- 1 cup cake flour
- 1 T. sea salt
- ADD YEAST MIXTURE; KNEAD. COVER AND LET RISE. SHAPE INTO PIZZA CRUSTS.
ROAST DUCK POT-AU-FEU WITH HOISIN-GLAZED SHALLOTS

1. Put the potatoes and turnips (or celery root) in a pot of cold salted water and bring to a boil
- 3 medium potatoes, peeled and cut into large chunks
- 2 turnips or celery roots, peeled and cut into large chunks
- 1 Chinese barbecued duck
- 6 cups chicken stock
- 1 bay leaf
- 1 star anise
- 4 cups chopped cabbage
- 2 leeks, trimmed and chopped
- 2 shallots, finely sliced
- 1 tsp chopped garlic
Turkey Hash

In a skillet, heat turkey fat or oil
- 2 tablespoons turkey fat or vegetable oil
- 2 cups finely sliced onions
- 2 cups diced potatoes
- 3 cups diced cooked turkey meat
- 1/2 cup turkey broth, see recipe above
- Salt
- Freshly ground black pepper
