SHORTCAKE - WITH ROSE CREAM AND LIME

Requires 1 hour of refrigeration
- CAKE:
- 1 C. cake flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 2 sticks unsalted butter, softened, plus melted butter for greasing pan
- 1 C. plus 2 T. granulated sugar, divided
- 2 T. heavy cream
- 4 large egg whites
- ROSE CREAM:
- 2 C. heavy cream
- 1/2 C. granulated sugar
- 2 tsp. rose water
- 5 large egg yolks
- LIME GELEE:
- 1 C. granulated sugar and 1/2 C. water
- 1 C. fresh lime juice (5 large limes), divided
- 1 envelope (1 T.) powdered gelatin
- 1 tsp. lime zest
- Sorbet of choice
- Rose geranium leaf for garnish

- 1 cup warm water
- 1 package active dry yest
- 2 1/2 cups unbleached all purpose flour
- 2 tablespoons olive oil
- 1/2 teaspoon salt
BURGERS - ROSEMARY BLUE

In large bowl, combine ground beef, rosemary and seasoning; shape into 4 patties
- 2 lbs 85% lean ground beef
- 2 T. snipped fresh rosemary
- 2 tsp. Kowalski's Northwood's Grill Seasoning
- 4 slices red onion
- 1 T. extra virgin olive oil
- 4 oz. triple creme blue cheese, cut into 4 slices
- 4 onion big buns
- 4 leaves red tipped leaf lettuce
- 4 slices tomato
COFFEE CAKE - CRANBERRY COFFEE BRAID

1. Roll dough out into an 11x15-inch rectangle on a lightly floured surface

- 1 12-oz. package Cranfruit

- 1 1/2 cups uncooked rice
- 1/4 pound mushrooms, sliced
- 3 green onions (tops optional), chopped
- 3 cups chicken broth
- 1 teaspoon basil
- 1 cup (4oz.) Sargento Fancy Shredded Cheddar Cheese
CRABMEAT CASANOVA

- 3 tablespoons clarified butter
- 9 thin slices French bread
- 12 slices lemon
- 18 ounces lump crab meat
- 3 tablespoons cognac, warmed
- 6 tablespoons dry white wine
- 1 cup fish stock
- 3/4 teaspoon salt
- Scant 3/4 teaspoon freshly ground black
- pepper
- 3 tablespoons lemon juice
- 1 tablespoon finely chopped parsley
- 3 tablespoons thin carrot curls
PIZZA MARGHERITA
