TURKEY TETRAZZINI

In a skillet, heat the turkey fat over high heat
- 2 tablespoons turkey fat or butter
- 1 large onion, peeled and chopped
- 1 cup mushrooms, sliced
- 1/2 cup Chablis or other white wine
- 1 cup turkey broth
- 3 cups diced cooked turkey meat
- 8 ounces cooked linguine
- 1/2 cup slivered almonds
- Grated Parmesan cheese
SACRISTAN COOKIES

Preheat oven to 350'F and position rack in the center
- 1/4 cup pistachios
- 2 T sugar
- 1 sheet puff pastry, frozen
- 1 egg yolk
- 1 T milk
- Sundae filling
- 1 pint hulled strawberries, 1/2 sliced and 1/2 diced
- 1/2 pint vanilla ice cream
- 1/4 cup chopped pistachios, for garnish
PROSCIUTTO-WRAPPED BREADSTICKS

Heat oven to 350°F. Line two baking sheets with parchment paper
- 1 tube (11 oz.) refrigerated breadstick dough
- 1/3 cup finely grated Parmesan cheese
- 11 pieces thinly sliced prosciutto (about 2/3 lb. total), each cut in half lengthwise
COFFEE CAKE - CRANBERRY APPLE WHEEL

1. Combine 2 C. flour, yeast, sugar and salt in a medium mixing bowl
- 3-4 C. flour
- 1 package yeast
- 1/3 C. sugar
- 1/2 tsp. salt
- 1/3 C. butter, melted
- 1 C. milk
- 1 egg
- 1 C. coarsely chopped fresh or frozen cranberries
- 2 apples, peeled and diced
- 1/2 C. chopped walnuts
- 1/2 C. brown sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 5 T. flour
- 1 C. powdered sugar
- 2 T. water
TURKEY PILAF

In a skillet, heat turkey fat over high heat
- 1 tablespoon turkey fat or vegetable oil
- 1 medium onion, peeled and chopped
- 1 cup converted rice
- 3 cups turkey broth, see recipe above
- 1/3 cup raisins
- 2 cups diced cooked turkey meat
- Salt and freshly ground black pepper to taste
Shrimp Wraps

In large bowl combine first seven ingredients; toss well
- 2 large cloves garlic, minced
- 2 tsp minced ginger
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1/2 tsp ground red pepper (cayenne)
- 1/2 tsp ground turmeric
- 2 lb. jumbo shrimp, peeled, deveined and diced
- 2 tbsp peanut oil, divided
- 2 scallions, sliced
- 2 tbsp fresh lemon juice
- Salt and pepper to taste
- 2-3 heads Boston lettuce, separated into leaves
- Hoisin sauce, shredded carrots, bean sprouts, julienne scallions for garnish
YELLOW CAKE - ICEBERG WITH WHITE CHOCOLATE MOUSSE AND BERRIES

Fast cake since it uses already prepared yellow cake
- WHITE CHOCOLATE MOUSSE:
- 8 " yellow cake
- 1 pint fresh berries
- 2 C. heavy cream whipped to stiff peaks
- 1 C. white chocolate melted until warm,
- not hot
- BUTTER CREAM FROSTING:
- 1/2 C. butter
- 1 lb. confectioners sugar
- 1/8 tsp. salt
- 1 T. vanilla extract
- 1 T. heavy cream
POUND CAKE -VERA'S ESPRESSO FUDGE WITH CHOCOLATE GLAZE

Bundt cake required
- FOR CAKE:
- 1 1/2 C. unsalted butter, softened
- 3 C. granulated sugar
- 6 large eggs at room temperature
- 2 C. unsifted cake flour
- 1 1/2 C. unsweetened cocoa powder
- 1 tsp. salt
- 1/2 tsp. baking powder
- 2 T. favorite coffee granules (not instant)
- 2 tsp. vanilla extract
- 1 C. whole buttermilk at room
- temperature
- 1/4 C. creme de cacao
- cooking spray
- flour to prepare cake pans
- FOR CHOCOLATE GLAZE:
- 3/4 C. unsalted butter
- 1/4 C. water
- 1 1/4 C. granulated sugar
- 1 1/2 T. unsweetened cocoa powder
- 1/2 C. creme de cacao
Crab-Vegetable Soup

If using surimi (crab flavored blended pollock), purchase flaky style or mixture of flake and chunk
- 2 c. water
- 1 (10 3/4 oz) can low-sodium chicken broth
- 1 (16 oz) cans tomatoes, chopped and undrained
- 3/4 c. chopped celery
- 3/4 c. chopped onion
- 1 tsp seafood seasoning
- 1/4 tsp lemon pepper
- 10 oz frozen corn
- 10 oz. frozen peas
- 1 lb. crab meat, cooked, flaked and cartilage removed.
