Ingredients

  • 2 dozen large frozen shrimp, thawed and peeled (or 1/2 lb. shrimp and 1/2 scallops or other seafood)
  • 1 tsp. ground cayenne pepper
  • 1/2 tsp. black pepper
  • 1/2 tsp salt
  • 1/2 tsp. crushed red pepper
  • 1/2 tsp crushed dried thyme
  • 1 tsp. crushed dried basil
  • 1/2 tsp. crushed dried oregano
  • 1/3 cup margarine
  • 1 1/2 tsp. minced garlic
  • 1 tsp. Worcestershire sauce
  • 1/4 cup beer room temperature
  • 1 cup or 1 large tomato, coarsely diced

Step 1

Clean and devein shrimp under cold running water. Drain well, set aside; In small bowl combine next 7 ingredients. Melt margarine in large skillet over high heat, adding seasonings, Worcestershire Sauce and garlic, and mixing well. When margarine is melted, add tomato, then shrimp. Cook for 2 minutes, stirring constantly. Add beer, cover and cook for 1 minute longer. Remove from heat. Serve over rice. Makes 2 to 3 servings.
