SAUSAGE AND APPLE KEBOBS

Cut sausage into 1" chunks
- 1 lb Kielbasa, Smoked Sausage or Precooked Pork Sausage Links
- 4 apples, such as Granny Smith or Yellow Delicious
- 1 yellow onion, quartered (optional)
- 1/4 C butter, melted
- 6 " wooden Skewers, soaked in water to prevent burning
Bourbon Butterscotch Baked Apples

Preheat oven to 375 degrees
- 6 large baking apples, such as Golden Delicious, Granny Smith or Rome Beauty
- 1/2 cup (1 stick) unsalted butter, cut in small pieces
- 3/4 cup firmly packed brown sugar
- 3/4 cup bourbon (or rum, cognac or Scotch)
- 1/4 C. heavy cream
- 1 tbsp. vanilla
Carrots with Aceto Balsamico

Peel and slice thinly on a mandolin 5-6 medium carrots
- 5-6 medium carrots
- 1/4 cup water
- 1 tbs. butter
- Little salt.
- 2-3 tbs. brown sugar
- 2 tbs. butter
- 1/2 -1 tsp. Aceto Balsamico (balsamic vinegar)
LAMB SHOULDER - COOKED SEVEN HOURS

Note: Have the butcher bone and tie the shoulder roasts to save space and make the cooking easier
- 2 lamb shoulder roasts, totaling 5 to 6 lbs (see note below)
- Salt and freshly ground pepper
- 4 oz thickly sliced bacon
- 6 chicken wings, second joints and tips only
- 2 large onions, sliced
- 2 cloves garlic, crushed
- 10 to 12 sprigs thyme
- 1/4 C. flour
- 3 T. tomato paste
- 2 C. water or broth
- 1 C. red wine
- Arrowroot or potato starch if needed for thickening gravy
FRUIT - BROWN SUGAR CANTALOUPE

Heat oven to 400°F. In small bowl combine red wine, white sugar, ground cloves and ground allspice
- 2 C. red wine
- 1 C. white sugar
- 1/2 tsp. ground cloves
- 1/2 tsp. ground allspice
- 1 cantaloupe
- 5 whole star anise
- 6 T. brown sugar
- 1 T. unsalted butter
TART - GOAT-CHEESE WITH ARTICHOKES AND ONION

Chill 1 hour
- 1 sheet frozen puff pastry (from a 14 oz. package), thawed
- 1 T. unsalted butter
- 1 small onion, chopped
- 8 fresh artichoke hearts, cooked, or 1 can(14oz.) artichoke hearts, quartered
- 3 eggs
- 1 log (3.5 oz.) goat cheese, softened
- 1 C. milk
- 1 T. chopped fresh tarragon
- 3/4 tsp. salt
PINEAPPLE IN BROWN SUGAR WITH ICE CREAM

1. Melt butter in a medium saute pan over low heat
- 1 tablespoon,unsalted butter
- 2-3 tablespoons dark brown sugar
- 1 pineapple, peeled, cored, and cut into 1-1/4-inch cubes
- 2 tablespoons rum (optional)
- 1/2 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
- 1 pint vanilla ice cream
LAMB SHANKS - STOUT BRAISED

Season lamb shanks with salt and pepper
- 4 1/2 lb lamb shanks
- Salt and finely ground pepper, to taste
- 4 tsp. vegetable oil
- 1 bottle Irish stout braising base
- Glazed root vegetables for serving
- Chopped fresh flat-leaf parsley for garnish
SHORTCAKE - STRAWBERRY BUTTERMILK

1. Preheat oven to 450° F
- 2 C. flour
- 1/4 C. sugar
- 1 T. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 C. butter
- 1/2 C. buttermilk
- 1 tsp. grated lemon peel
- 2 eggs (divided)
- 2 pints fresh strawberries, stemmed and sliced
- 1 C. heavy cream, whipped and sweetened
Creamy Mushrooms

1. Preheat oven to 350°. Butter four 6-ounce custard cups
- Butter
- 4 slices white sandwich
- 1 pound quartered white mushrooms
- 3/4 cup heavy cream,
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Pinch of ground nutmeg
