NEW YORK STRIP - GARLIC HERB MARINATED STEAK

For Marinade, mix all ingredients together
- Lemon Butter:
- 1/2 C. extra virgin olive oil
- 1 oz. minced garlic
- 1 T. cracked peppercorns
- 1 T. Fresh thyme
- 1/8 tsp. crushed red chilies
- 2 T. balsamic vinegar
- 1 bay leaf
- 1/2 lb. butter, softened
- 1/2 C. parsley, chopped
- Juice of 2 lemons
- 1/2 T. black pepper
- 8-10 anchovies, minced
- 4 10 oz. New York Steaks
"BRAVO" POTATOES

In a large nonstick skillet, heat olive oil over medium-high heat until it shimmers
- FRY IN 2 T. OLIVE OIL:
- 1 1/2 lb. russet potatoes, peeled, cut into 1/2 cubes (about 4 cups)
- PULSE; ADD TO POTATOES:
- 1 can (14 oz.) diced tomatoes, drained
- 4-5 cloves garlic, sliced
- 1/2 t. ground cumin
- 1/2 t. sugar
- 1/2 t. crushed red pepper flakes
- 10 dashes Tabasco
- Salt to taste
- GARNISH WITH:
- Drizzle of lemon juice
- Chopped fresh cilantro
- Coarse sea salt
FRUIT - VANILLA GRAPEFRUITS AND ORANGES

Cut the top and base off the grapefruits and oranges
- 4 large pink grapefruits
- 5 seedless oranges
- 2 T granulated sugar
- 1 C water
- 1 vanilla bean, split in half lengthwise
- 1/4 C brown sugar
- 2 T butter
Peach and Blackberry Cobbler

I. 'Make the pastry: In a food processor, pulse the flour with the salt
- 2 1/2 cups all purpose flour
- 3/4 teaspoon salt
- 1/2 cup plus 2 tablespoons cold solid vegetable shortening
- 1/2 cup ice water
- 1 cup sugar, plus more for sprinkling
- 1/4 cup cornstarch
- 5 1/2 pounds ripe peaches, peeled, pitted and cut into 1/2 inch wedges
- 3 cups blackberries
- 1/4 cup plus 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
- 2 tablespoons half-and half, for brushing
Spicy Broccoli with Garlic

1. Peel and slice thick stems from 1 1/2 pounds broccoli; separate florets 2
- 1 1/2 pounds broccoli
- 3/4 cup water
- 4 1/2 tablespoons olive oil
- 1 minced garlic clove
- 1/4 teaspoon salt
- 1/8 teaspoon crushed red pepper
- 1 1/2 teaspoons vinegar.
Shrimp with Pesto Appetizers

Combine the basil, pine nuts, garlic, black pepper, salt, oil and Parmesan in food processor or blender
- 1 cup packed fresh basil
- 1/4 cup pine nuts, toasted
- 1 1/2 tbsp. chopped, fresh garlic
- 1 tsp black pepper
- 1 tsp salt
- 3 tbsp olive oil
- 1/3 cup fresh grated Parmesan cheese
- Crostini (recipe follows)
- 1 1/2 lb. shrimp, peeled, deveined, cooked and cooled
- Black olive or red pepper pieces for garnish
