Bourbon Butterscotch Baked Apples

Ingredients
- 6 large baking apples, such as Golden Delicious, Granny Smith or Rome Beauty
- 1/2 cup (1 stick) unsalted butter, cut in small pieces
- 3/4 cup firmly packed brown sugar
- 3/4 cup bourbon (or rum, cognac or Scotch)
- 1/4 C. heavy cream
- 1 tbsp. vanilla

Step 1
Preheat oven to 375 degrees. Core apples and remove 1/2 inch strip of peel at the top. Arrange apples in a shallow baking dish and top with butter. Sprinkle with brown sugar and drizzle with bourbon. Bake apples for 30-50 minutes,until tender (time will depend on size and type of apple).
Transfer apples to a platter and keep warm while making sauce.
Stir cream into the baking juices and at high heat bring to a boil. Reduce to medium high, stirring frequently, until reduced by half and sauce is thick enough to coat back of spoon, about 7-10 minutes. Remove from heat and add vanilla. Serve apples on puddle of sauce. If desired, garnish plate with edible flower. Makes 6 servings.
