TART - TORTA DI NOCI (WALNUT TART FROM SORRENTO)

For Italian Short Pastry: 1
- For Filling:
- 1 1/2 C. sugar
- 2 T. honey
- 3/4 C. plus 2 T. heavy cream, warmed
- 3 C. walnuts, coarsely chopped
- 1 egg, lightly beaten, for egg wash
- For Italian Short Pastry:
- 1 1/4 C. confectioners' sugar
- 3 C. bleached all-purpose flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1 C. unsalted butter, cut into T. sized pieces, room temperature
- 2 large eggs, lightly beaten together
- 1/2 tsp. vanilla
- 2 lemons or 1 orange, rind grated
FARFALLE - TOMATO MUSHROOM

1. Cook farfalle according to package directions
- 2 T. olive oil
- 1/2 C. onion, diced
- 4 green olives, finely chopped
- 1 C. mushrooms, sliced
- 1/2 tsp. capers
- 1 clove garlic, minced
- 1/4 tsp. thyme
- 1/4 tsp. oregano
- 1/4 tsp. red pepper flake (optional)
- Dash tabasco
- 3 roma tomatoes, diced
- fresh ground black pepper
- 1.5 oz. Jus de Poulet Lie Gold or Veggie Glace Gold
- 1/2 C. red wine
- 4-6 oz. water, hot
- 1/4 C. fresh parsley, finely chopped
- 12 oz. farfalle pasta
- fresh parmesan cheese, grated
Roast Garlic and Sundried Tomato Dunk

In a food processor combine all ingredients and process until very smooth
- 4 oz Feta Cheese
- 4 oz. Roquefort or Blue Cheese
- 8 oz. Cream Cheese
- 1 small roasted red pepper
- 1 scoop roasted onion
- 1 head roasted garlic
- 2 cloves fresh garlic, minced
- 3 oz. sun dried tomatoes in oil
- 1 tbs. Veggie Glace Gold
- 2 tbs. Fresh or 1 tsp. dried rosemary
- 1 tbs. Fresh or 1 tsp. dried basil
- 1 tsp. Fresh black pepper
BLACKBERRY COBBLER WITH CORNMEAL -BISCUIT TOPPING

Preheat the oven to 325° F
- 1 1/2 cups packed brown sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 1/4 cup water
- 6 cups ripe blackberries (fresh or unsweetened)
- 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 3/4 cup fine white cornmeal
- 1/4 cup plus 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/3 cups heavy whipping cream
- 3 tablespoons packed brown sugar
- 3 tablespoons unsalted butter, melted
POPOVERS - LAVENDAR

1. Preheat oven to 375 degrees
- 4 eggs
- 1 C. all-purpose flour
- 3/4 C. milk
- 2 T. lavender blossoms or savory and thyme blossoms
- Honey-Butter Lavender Sauce
- 1/2 C. honey
- 1 T. unsalted butter, softened
- 1 T. lavender blossoms
FAJITAS - CHICKEN WITH HOMEMADE SALSA

1. In a shallow glass dish, combine garlic, oil, chili powder, oregano and ground cumin
- Homemade Salsa:
- 2 whole chicken breasts, skinned, boned and cut in half inch strips
- 2 green peppers, halved and seeded
- 1 large white onion
- 1 clove garlic, minced
- 2 T. oil
- 1 tsp. chili powder
- 1 tsp. oregano
- 1 tsp. ground cumin
- 1 - 16 oz. can whole tomatoes
- 1/2 C. chopped white onion
- 4 oz. can chopped green chiles
- 1/2 C. hot to medium hot taco sauce
- salt and pepper to taste
- 1 T. chopped fresh Cilantro, optional
CUSTARD - BREAD AND BUTTER

1. Preheat oven to 325°F
- 2 C. milk
- 2 C. cream
- 1/2 vanilla bean
- 1 piece of lemon peel
- 6 egg yolks
- 3 whole eggs
- 1/2 C. sugar
- 4-6 French bread slices
- Unsalted butter
- Slivered almonds
LINGUINI - GRILLED CHICKEN PESTO

1. Toast pine nuts in olive oil on medium heat for 3-4 minutes until fragrant, shaking pan to toast evenly
- 2/3 C. pine nuts, toasted, divided
- 3 T. minced garlic
- 4 C. fresh basil, about 4 oz.
- 1 1/2 tsp. kosher salt
- 1/2 tsp. coarse ground black pepper
- 1 1/4 C. extra virgin olive oil
- 2 C. shredded Parmigiano Reggiano, divided
- 2 9 oz. pkgs. whole wheat linguini
- 4 chicken breasts, grilled, cut into strips on the diagonal
- 1 C. jar sun-dried tomatoes in olive oil and herbs, drained and blotted dry
RIB STEAKS - COFFEE RUBBED

To make the rub, combine the espresso, brown sugar, chili powder, paprika, garlic powder, mustard seeds, hot pepper...
- For the Rub:
- 2 T. ground espresso beans (not instant), regular or decaf
- 1 1/2 T. light brown sugar; lightly packed
- 1/2 tsp. ground chipolte chilli pepper
- 1 T. paprika
- 1 1/2 tsp. granulated garlic powder
- 1/2 tsp. whole mustard seeds
- 1/4 tsp. hot red pepper flakes
- Kosher salt and freshly ground black pepper
- For the Steaks:
- 2 (1 1/4 lbs) boneless rib-eye steaks, 1 1/4 - 1 1/2 inch thick
- Canola or olive oil
Broccoli With Pearl Onions
