Strawberry Cannoli Parfaits

Directions: In a medium bowl, combine strawberries and Amaretto
- 1 lb. strawberries, hulled and sliced
- 3 tbs. Amaretto
- 2/3 cup light whipping cream
- 1/3 cup confectioners' sugar
- 1 cup ricotta cheese
- 1 tsp. ground cinnamon
- 1/4 cup unsalted pistachios, chopped
- 24 Amaretti cookies, crushed
- 1/2 cup miniature semi-sweet chocolate chips
BISCUITS - CORNMEAL CRANBERRY

1. Preheat oven to 425°F
- 1-3/4 C. unsifted white flour
- 1 T. white sugar
- 1/4 C. cornmeal
- 1 T. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 1/3 C. unsalted butter, cut into 1/2-tsp. sized pieces and frozen
- 1/2 C. buttermilk
- 1 egg
- 1 C. cranberries
Caffe Solo's Brad's Heart Attack Taters

Crisp bacon in butter. add sliced garlic
- 3 pounds Yukon gold potatoes
- 2 pounds rutabaga
- 1/2 , cup unsalted butter
- 1/2 cup diced bacon
- 1/2 cup heavy whipping cream
- 15-21 cloves garlic
- salt and pepper
WISCONSIN HOLIDAY FONDUE

In a sauce pan over medium heat, brown onion and ground beef
- 1 medium onion, chopped
- 1/2 pound ground beef
- 2 cans (10 1/2 oz each) pizza sauce
- 1 1/2 teaspoons fennel seed
- 1 1/2 teaspoons leaf oregano
- 1/4 teaspoon garlic powder
- 2 1/2 cups (10 oz) shredded Wisconsin Cheddar cheese
- 1 cup ( 4 oz) shredded Wisconsin Mozzarella cheese
- Italian or French bread, or English muffins
PUDDING - BAKED GINGERBREAD AND APRICOTS

1. In a frying pan, melt half the butter over a moderate heat
- 60 g butter
- 4-6 T. caster sugar
- 12 ripe apricots, halved
- 6 thick slices gingerbread
- 3-4 T. Campari, peach liqueur, pudding
- wine or vermouth
- Scoops of ginger ice cream, mascarpone or creme Chantilly
ANGEL FOOD CAKE - BOSTON CREAM

Chill at least 2 hours before completion
- Custard Filling:
- 1 angel food cake
- 3 large egg yolks
- 1/3 C. granulated sugar
- 1/2 C. hot milk
- 1/2 tsp. vanilla extract
- 1 tsp. unflavored gelatin powder
- 2 T. boiling water
- 2/3 C. whipping cream, whipped
- Chocolate Drizzle:
- 3 T. water
- 2 T. unsalted butter
- 1 C. icing sugar
- 1/4 C. unsweetened cocoa powder
- 1/2 tsp. vanilla extract
- Garnish:
- Additional whipped cream
- Flowers (optional)
COUNTRY RIBS - BARBEQUED

In a large Dutch oven, precook the ribs by covering them with water and the sliced onion
- 3 to 4 lb. country style ribs
- 1 medium onion,sliced
- 1 1/2 C. Ketchup
- 3 T. cider vinegar
- 2 T. molasses
- 1 tsp. salt
- 1 tsp. chili powder
- 1/3 C. brown sugar
- 1 T.Worcestershire Sauce
FRIED POTATOES WITH PARSLEY & GARLIC

Soak potatoes in bowl of ice water 30-60 minutes
- 3 lb. Yukon gold potatoes, peeled and cut into wedges
- Vegetable oil for frying
- Kosher salt, to taste
- 1 Tbs. finely chopped fresh flat-leaf parsley
- 2 or 3 garlic cloves, finely minced
Vegetable Bites

Combine all. ingredients except vegetables in food processor; process until smooth
- 1 package (8 oz.) cream cheese, softened
- 1 envelope GOOD SEASONS Italian Salad Dressing Mix
- 1/4 cup GREY POUPON Dijon Mustard
- 3/4 cup sour cream
- Assorted vegetables
Artichoke and Fava Bean Salad Tossed with Los Ranchos Olive Oil from Uruguay

Prepare artichokes: In a large saucepan combine water, lemon juice and halves and bring to a boil
- For lava beans:
- 1 quart water
- 2 fresh lemons, juiced, halves
- reserved
- 24 baby artichokes, trimmed and
- halved
- 4 cloves garlic finely chopped
- 1/2 cup Los Ranchos olive oil
- Salt and freshly ground black
- pepper
- 1 quart water
- 2 pounds fresh fava beans, shelled
- FOR SALAD:
- 1/2 pound baby lettuces, rinsed and
- prepared for tossing
