- FOR CAKE:
- 6 oz. pitted dates
- 1 1/4 C. water
- 1 tsp. baking soda
- 1 1/2 C. all-purpose flour
- 1 tsp. baking powder
- 8 T. unsalted butter
- 3/4 C. granulated sugar
- 2 whole eggs
- 1 tsp. vanilla extract
- FOR TOFFEE SAUCE:
- 2 1/2 C. light brown sugar
- 7 T. unsalted butter
- 1 C. half-and-half
- 1/2 oz. brandy
- 1 tsp. vanilla extract
- 6 oz. Heath bar, chopped
- FOR TOASTED PECAN ICE CREAM:
- 1 1/2 C. pecan pieces
- 3 C. whole milk
- 1 cinnamon stick
- 1/2 vanilla bean, split and scraped
- 1 C. granulated sugar, divided
- 6 egg yolks
- 1/2 C. sour cream
- 1/2 T. whiskey
- FOR GARNISH:
- Mint leaves
- Optional garnish: toasted walnut halves
- and cocoa powder
Smashed Potatoes

In a medium saucepan, cover 3 pounds new red potatoes, cut into chunks, with salted water; bring to a boil
- 3 pounds new red potatoes
- 1 stick butter
- 3/4 cup milk
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons chopped chives or scallion greens.
Orange Ginger Dip

- 2/3 cup sugar
- 1/8 teaspoon kosher salt
- 1 tablespoon pure vanilla or

- 1/3 cup milk
- 1/3 cup chunky salsa
- 3 cups Monterey Jack cheese
- 10 (10 inch) flour tortillas

PINK GRAPEFRUIT BRULEE

Preheat broiler. With sharp knife, loosen membranes around each grapefruit section
- 6 large Texas pink grapefruit, halved
- 1 Clip light brown sugar
- 1 teaspoon vanilla
GARLIC ROASTED POTATOES

Preheat the oven to 400 degrees
- 3 pounds small red-or white skinned potatoes ( or a mixture)
- 1/4 cup good olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 2 tablespoons minced garlic (6 cloves)
- 2 tablespoons minced fresh parsley
Smoky Chickpea Dip

1. In a medium saucepan, cover the chickpeas with 3 inches of water and bring to a boil
- 1/2 pound dried chickpeas, soaked
- overnight and drained
- 1 teaspoon cumin seeds
- 4 small garlic cloves, smashed
- 3 tablespoons fresh lemon juice
- 1/4 teaspoon hot pimenton or other hot paprika
- 1/8 teaspoon cayenne pepper
- 2 tablespoons extra virgin olive oil,
- plus more for drizzling
- 2 tablespoon extra-virgin olive oil with lemon (see Note)
- Salt
- 2 tablespoons chopped cilantro
- Grilled bread or pita, for serving
