SHRIMP AND CASHEW CURRY

Melt butter in a 2 quart saute pan over medium heat
- 2 Tbsps butter
- 3 Tbsps curry powder
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red or green bell pepper
- 1/2 tsp grated nutmeg
- 1 cup white wine
- 1 cup papaya nectar
- 1 pound raw shrimp, peeled and deveined
- 1 pound whole fancy cashews
POTATO-CRUSTED CHICKEN CASSEROLE

1. In a large bowl, toss potato slices with oil, salt and pepper

- 2 tablespoons reduced-fat mayonnaise
- 2-1/4 teaspoons prepared mustard
- 1 pouch (7.06 ounces) light water-packed tuna, flaked
- 1/4 cup sliced water chestnuts, chopped
- 1/4 cup chopped green onions
- 1/4 cup finely chopped celery
- 3 tablespoons chopped sweet red pepper
- 2 spinach tortillas (8 inches), room temperature

- 1 large yellow or white onion, peeled, grated (use the large holes of a box cheese grater)
- 2/3 cup milk
- 4-5 slices of bread, crusts removed, bread cut into pieces
- 2 eggs
- 1 pound ground pork
- 1 1/2 pounds ground beef
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground nutmeg
- 1 teaspoon ground cardamom
- 2 teaspoons black pepper
- 6 Tbsp butter
- 1/3 cup flour
- 1 quart beef stock
- 1/2 to 3/4 cup sour cream
- Salt
- 2 to 4 Tbsp of Lingonberry, red currant, raspberry or cranberry jelly, less or more to taste (optional)

- 2 cups coarsely crushed cornflakes
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder

- 2 TBLS lemon
- 2 TBLS honey
- 1 TBLS prepared mustard (yellow)
- 2 tsp Worcestershire sauce
- Garlic (2 TLBS of the juice of the container)
- 3-4 Dashes of bottled hot pepper sauce

- 2 Tbsps fresh basil leaves, chopped
- 1 Tbsp extra virgin olive oil
- 1 Tbsp balsamic vinegar
- kosher salt and fresh cracked pepper to taste
- 3 oz. part skim mozzarella, diced
