- 1 cup brown sugar -- packed

- 1 teaspoon vanilla extract
- 1 large egg -- lightly beaten
- 9 ounces all-purpose flour (about 2 cups)
- 2 1/2 cups quick-cooking oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda

- 3/4 cup sweetened condensed milk (fat-free)
- 1 1/4 cups butterscotch morsels (about 8 ounces)
- 1/8 teaspoon salt
- 1/2 cup walnuts -- finely chopped & toasted

- 1 head cauliflower (about 1 lb) -- trimmed, cut into 1" florets, stems peeled and cut into 1/2" thick slices
