To begin, dice the onion. Melt the butter in a large pot or Dutch oven
- 6 tablespoons (3/4 stick) butter
- Two 14.5-ounce cans diced tomatoes
- One 46-ounce bottle or can tomato juice
- 2 tablespoons sugar
- 1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
- Freshly ground black pepper
- 1/3 cup sherry, optional
- 1 cup heavy cream
- 1/4 cup chopped fresh basil
- 1/4 cup chopped flat-leaf parsley
Spicy Confit Chiles

- 16 whole medium-hot red chiles with stems (such as Fresno or red jalapeño)
- 10 garlic cloves, peeled
- 1 cup olive oil or 1/2 cup olive oil and 1/2 cup vegetable oil
- 1 teaspoon kosher salt, plus more
Asparagus Ceviche

In a large bowl, toss all ingredients gently until well mixed
- 1 pound asparagus spears, chopped
- 1 pound shrimp, cooked and chopped
- 1 cup crabmeat, shredded
- 1 bunch green onions, chopped
- 1/2 cup chopped red onions
- 1 1/2 cucumbers, peeled and chopped
- 1 avocado, chopped
- 1/2 cup cilantro leaves, chopped
- 1 cup chopped tomato
- 2 cups shredded cabbage
- 1 jalapeno pepper, seeded and chopped
- 2 lemons, juiced
- 3 limes, juiced
- 1 1/2 tablespoons garlic salt
- Tostada shells, if desired
- Hot sauce, optional, for garnish

In a small bowl, pour the boiling water over the tomatoes
- 1 cup boiling water
- 4 sun-dried tomatoes (not oil-packed)
- 2 1/2 lb red-skinned potatoes, cut into cubes
- 3 cups water
- 2 cups vegetable broth
- 1/2 tsp. freshly ground pepper
- 3 zucchini, coarsely grated
- 1/3 cup nonfat evaporated milk
- 1/3 cup chopped fresh basil or 1 tsp. dried basil
Steamed Whole Artichokes

Directions Put the parsley, garlic, bay leaves, lemons, wine, oil and broth in a large pot and bring to a simmer
