Zucchini Bread

- 3 1/4 cups all-purpose flour
- 1 1/2 teaspoons salt
- 1 teaspoon ground nutmeg
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1/3 cup water
- 2 cups grated zucchini
- 1 teaspoon lemon juice
- 1 cup chopped walnuts or pecans
Baked Lemon Chicken

Directions Preheat the oven to 400 degrees F
- One 3 1/2- to 4-pound chicken, cut into 8 pieces, patted dry
- Kosher salt and freshly ground black pepper
- Flour for dredging
- 3 tablespoons extra-virgin olive oil
- 1 large onion, thinly sliced
- Peel of half a lemon, white pith removed, cut into very thin strips
- 2 large garlic cloves, minced
- 1 1/2 teaspoons fresh rosemary leaves
- 1 tablespoon honey
- 1/4 cup freshly squeezed lemon juice
- 1 cup chicken broth, homemade or canned low-sodium

- 6 cloves garlic, roughly chopped
- 2 tsp. cumin seeds, crushed
- 1 tsp. paprika
- 1 tsp. ground turmeric
- 5 tbsp. olive oil
- 4 skinless bone-in chicken thighs
- 4 skinless bone-in chicken drumsticks
- 1 tsp. crushed saffron threads
- 4 medium yellow onions, cut into 12 wedges each Freshly ground black pepper, to taste
- 1 lemon, thinly sliced crosswise, seeds removed
- 1/3 cup finely chopped parsley
- Cooked white rice, for serving
Cheese Fondue

In a small bowl, coat the cheeses with cornstarch and set aside
- 1/2 pound Emmentaler cheese, shredded
- 1/2 pound Gruyere cheese, shredded
- 1 tablespoons cornstarch
- 1 garlic clove, peeled
- 1 1/4 cup dry white wine
- 1 tablespoon lemon juice
- 1 tablespoon cherry brandy, such as kirsch, or sherry
- 1/2 teaspoon dry mustard
- Pinch nutmeg
- Assorted dippers
Bread-and-Butter Zucchini Pickles

In a large bowl, toss the zucchini and onion with 2 tablespoons of the kosher salt
- 1 pound very firm medium zucchini, sliced crosswise 1/8 inch thick
- 1/2 cup thinly sliced onion
- 3 tablespoons kosher salt
- Ice water
- 1 1/2 cups unfiltered apple cider vinegar
- 1/3 cup sugar
- 2 teaspoons brown or yellow mustard seeds, crushed
- 1 1/2 teaspoons dry mustard powder
- 1 teaspoon ground turmeric
Perfectly Baked Beans (Ree)

Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F
- 4 4 4 slices regular bacon, diced
- 1 1 1 medium onion, cut into small dice
- 1 1 1 medium green bell pepper, cut into small dice
- 1 1 1 red bell pepper, cut into small dice
- 1 1 1 fresh jalapeno, chopped
- 4 4 cans 4 large cans (28 ounces each) pork and beans

- 3 canned chipotles in adobo and 1 tbsp. adobo sauce, puréed

Seared Scallops with Caper-Raisin Sauce

In a small saucepan, combine the capers, raisins and 3/4 cup of water
- 1/3 cup capers, drained
- 1/4 cup golden raisins
- 10 tablespoons unsalted butter, at room temperature
- 1 teaspoon sherry vinegar
- Kosher salt
- Ground pepper
- 1/4 cup canola oil
- Eight 1 1/2-inch cauliflower florets, sliced lengthwise 1/4 inch thick (24 slices)
- 2 tablespoons minced parsley
- 12 large sea scallops, halved crosswise
- 1/4 teaspoon freshly grated nutmeg

In a blender, combine the egg yolk, vinegar, salt, Worcestershire sauce, and pepper on a low speed
