- 1 tablespoon unsalted butter
- 2 tablespoons extra-virgin olive oil
- 3 leeks (1 1/2 pounds), white and light green parts only, halved lengthwise
- Kosher salt

- 3 endives (1 pound), halved lengthwise
- 3 garlic cloves, sliced
- 5 thyme sprigs, plus thyme leaves for garnish
- 1 cup low-sodium chicken broth

Baked Fried Green Tomatoes

For the tomatoes: Preheat the oven to 375 degrees F
- 1 cup 1 cup all-purpose flour
- 1 1/2 teaspoons 1 1/2 teaspoons fine sea salt
- 1 1/2 teaspoons 1 1/2 teaspoons Cajun or Creole seasoning
- 2 cups 2 cups panko breadcrumbs
- 1 cup 1 cup buttermilk
- 3 large 3 large unripe (green) tomatoes, sliced into 1/4-inch-thick slices
- Nonstick cooking spray, for the tomatoes
- 1 clove 1 clove garlic, minced
- Fine sea salt
- 1 large 1 large egg yolk (from a pasteurized egg)
