In a large skillet add the olive oil and add the onion or shallots and cook until softened

  • 2 tbsp olive oil
  • 1/4 tsp cayenne pepper (more if you like it hotter)
  • 3 shallots or 1/2 onion chopped
  • 3 cloves garlic minced
  • 1 28oz can tomatillos drained and cut up
  • 1 14 1/2oz can diced tomatoes (no need to drain)
  • 1 10 1/2oz can chicken broth
  • 1 7oz can chopped green chilies
  • 1/2 tsp crumbled dried oregano
  • 1/2 tsp ground coriander
  • 1 tsp ground cumin or more to taste
  • 1 can black beans drained
  • juice of 1 lime
  • 1 rotisserie chicken shredded
  • salt and pepper to taste
  • secret ingredient - 1 pkt sazon goya (any flavor)
