Red Beans & Rice

Add all ingredients to the cooking pot
- 16 oz. Can Red Kidney Beans
- 3 Cups Rice
- 10 Cups Beef Broth
- 1 Lb. Smoked Sausage, Sliced
- 2-1/2 Cups Celery, Chopped
- 2 Cups Onion, Chopped
- 2 Cups Green Bell Pepper, Chopped
- 1-1/2 tsp. Cajun Seasoning
- Hot Sauce, To Taste
Nova Scotia Baked Beans

1. Soak beans overnight. 2
- 2 cups Dried Beans; Yellow Eye, Kidney, Pea, or Solider
- 1/4 pound Butter
- 1/2 cup molasses
- 3 tablespoon Brown sugar
- 1 1/2 teaspoon salt
- 1 teaspoon Dry mustard; substitute liquid
- 1 teaspoon Freshly ground pepper
- 1 Medium Onion
- 1/3 - 1/2 pound Canadian bacon; cut up in small pieces
- 2 tablespoon Ketchup

In the pressure cooker add beans, water, salt, and pepper, bring mixture to a boil
- 1 1/2 pounds Navy Beans
- 2 1/2 quarts Water
- 1 1/2 cup Ketchup
- 1 12-oz can Tomatoes Whole Canned
- 8 Slice Bacon
- 1 pound Ham; dices into 1/2 inch cubes
- 2 ea Onions
- 4 cloves garlic
- 1 teaspoon Ground Mustard
- 2 1/4 cups Dark Brown Sugar
- 1 1/2 teaspoon salt
- 1 teaspoon black pepper
KIELBASA

- 5 TBSP SALT
- 1 TBSP SUGAR
- 2 CLOVE FRESH GARLIC
- 1 TBSP BLACK PEPPER
- 1 TSP MARJORAM
- 2 CUP ICE WATER

- 1 tablespoon dried thyme
HAM CHOWDER

- 8 cups chicken or ham stock
- 4 cups cubed Country ham
- 4 tablespoons dried rosemary
- 2 pounds bacon, diced
- 2 large onions, diced
- 3 leeks, diced
- 3 cloves garlic, minced
- 6 green onions, diced
- 6 large potatoes, cubed
- 1 pound carrots, cubed
- 1 1/2 cups heavy cream
