If using a deep fryer, heat vegetable oil to 375 degrees
- 1 cup lump or backfin crabmeat
- 1 cup special crabmeat
- = (small pieces white crabmeat)
- 1/2 cup mayonnaise
- 1/2 teaspoon freshly-ground black pepper
- 1/2 lemon -- juiced
- 1 1/2 cups panko bread crumbs
- Vegetable oil -- for frying
Garden Vegetable Soup

Heat the olive oil in large, heavy-bottomed stockpot over medium-low heat
- 4 tablespoons olive oil
- 2 cups chopped leeks, white part only
- = (from approximately 3 medium leeks)
- 2 tablespoons finely-minced garlic
- Kosher salt -- as needed
- 2 cups chopped into rounds peeled carrots
- = (approximately 2 medium)
- 2 cups diced peeled potatoes
- 2 cups fresh green beans in 3/4" pieces
- 2 quarts chicken or vegetable broth
- 4 cups chopped peeled seeded tomatoes
- 2 ears corn -- kernels removed
- 1/2 teaspoon freshly-ground black pepper

Preheat oven to 200 degrees
- 1/2 pound ground pork
- 1/4 cup finely-chopped scallions
- 2 tablespoons finely-chopped red bell pepper
- 1 egg -- lightly beaten
- 2 teaspoons ketchup
- 1 teaspoon yellow mustard
- 2 teaspoons Worcestershire sauce
- 1 teaspoon light brown sugar
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly-ground black pepper
- 1/4 teaspoon cayenne pepper
- 35 small wonton wrappers - (to 40)
- Water -- for sealing wontons
- 3 tablespoons vegetable oil - (to 4) -- for frying

Pork Kebabs With Rosemary Marmalade Glaze

Cut several long stems of rosemary and scrape them, leaving several leaves on the top end
- 8 rosemary stems -- to make skewers
- 1/4 cup olive oil -- plus
- 2 tablespoons olive oil -- divided
- 1/4 cup lemon juice
- 2 teaspoons orange zest
- 1 tablespoon chopped fresh rosemary
- 1 pound boneless pork loin
- 1 large red onion
- 1 green bell pepper
- 2 large firm peaches
- 1 cup orange marmalade
- Several sprigs fresh rosemary
Breakfast Sausage

Combine diced pork with all other ingredients and chill for 1 hour
- 2 pounds pork butt - (2 1/2 lbs with bone) -- diced 1/4" pieces
- 1/2 pound fat back -- diced 1/4" pieces
- 2 teaspoons kosher salt
- 1 1/2 teaspoons freshly-ground black pepper
- 2 teaspoons finely-chopped fresh sage leaves
- 2 teaspoons finely-chopped fresh thyme leaves
- 1/2 teaspoon finely-chopped fresh rosemary leaves
- 1 tablespoon light brown sugar
- 1/2 teaspoon fresh grated nutmeg

- 3 1/2 ounces large pearl tapioca - (abt 1/2 cup)

- 1/2 cup heavy cream
- 1 egg yolk
- 1/3 cup sugar
- 1 lemon -- zested
- 1 pinch salt
