Jamaican Jerk Marinade

Combine
- 1 tbsp allspice
- 1 tbsp dried thyme
- 1 tsp cayenne pepper
- 1/2 tsp fresh ground black pepper
- 1/2 tsp nutmeg
- 1/2 ground cinnamon
- 2 cloves garlic crushed
- 1 tbsp Brown sugar
- 2 tbsp olive oil
- 1/4 cup soy sauce
- 1/2 cup Apple cider vinegar
- 1/2 cup Orange juice
- Juice of lime
- 1 jalapeno or Serrano peppers, minced
- 3 thinly sliced shallots

1. Preheat oven to 350 2
- 3 cups flour
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. baking soda
- 3 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 2 tsp. vanilla extract
- 2 cups grated zucchini
- 1 cup chocolate chips
- 1 tbsp. orange zest
mango salsa

1. Place all ingredients in bowl and stir to blend 2
- 1 1/2 cup diced mango
- 1/2 cup small diced red pepper
- 1/3 cup finely chopped red onion
- 1 tbsp fresh cilantro
- 2 tsp minced garlic
- 2 tbsp rice wine vinegar
- 1 tbsp lime juice
- 1 tbsp minced jalapeno
- 2 tsp minced ginger
- Salt and pepper
Chili Cheese Puffs

1. Preheat oven to 425. Grease mini muffin cups and put in oven to get hot
- 3 eggs
- 1/2 cup milk
- 1/4 cup taco cheese
- 2 tbsp. jalapeno slices
- 1/3 cup flour
- 1/4 tsp. salt
- 1/4 tsp. baking powder
bourbon sweet potatoes

Cook and peel sweet potatoes, peel
- 3 very large sweet potatoes peeled and cooked
- 4 tbsp butter
- 4 eggs
- 3/4 cup milk
- 1/4 cup maple syrup
- 1/4 cup Brown sugar
- 1/4 cup bourbon ( or more )
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/8 tsp cloves
- Black pepper
- Mini marshmallows
spicy marinade for shrimp and scallops

Combine in mixing bowl for 2 hours
- 1/2 cup olive oil
- 2 tbsp hot pepper sauce
- 1/2 bunch parsley
- 2 cloves garlic
- 1 lemon juiced
- 1 tbsp ketchup
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 1 tsp ground black pepper
Sweet potatoes and apples

Oven at 350. Toss ingredients in bowl
- 3 lbs sweet potatoes peeled and cut into 1/2 inch pieces
- 1 lb granny Smith peeled and cut
- 2 medium onions julienned
- 4 tbsp unsalted butter
- 1/4 cup honey
- 1 tsp salt
- 1/4 tsp nutmeg
- 1/4 tsp cayenne
Leftover turkey chili

Heat olive oil in a medium pan over med low heat
- 2 tbsp olive oil
- 1 large onion cut in to 1/2 inch pieces
- 3 ribs of celery cut in 1/2 inch pieces
- 1 leek white and light green parts cut in to 1/2 inch pieces
- 3 carrots cut into 1/2 inch pieces
- 2 tbsp tomato paste
- 3 tbsp chili powder
- 2 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 3 cups homemade turkey or chicken stock
- 1 cup of canned crushed tomatoes
- 2 cups turkey gravy
- 2 lbs shredded cooked turkey
- 2 cans of black beans

Sautee onion and garlic. Add habanero, cinnamon, brandy
- 1/4 cup olive oil
- 1 yellow onion chopped
- 6 minced garlic cloves
- 2 tbsp. Brown sugar
- 1/3 cup maple syrup
- 1/2 cup apricot brandy
- 1/4 cup cider vinegar
- 1/2 tsp. Allspice
- 1/2 tsp. Nutmeg
- 1/2 tsp. Thyme
- 1/4 tsp. Cinnamon
- 1 tbsp. Coriander
- 1/4 tsp. Ginger
- 8 habanero
- 14 oz. Plain bbq sauce
- 4 kiwi peeled
- 1 mango peeled, pitted
- 2 peaches peeled
- 1 pear peeled
- Salt
