French Onion Soup

4 to 6 bowls of soup
- 8 onions sliced
- 2 minced garlic cloves
- 1/3 cup olive oil
- 2 tbsp. all purpose flour
- 8 cups beef stock
- 1/4 cup dry white wine
- 1/2 tsp. dried thyme
- 1 bay leaf
- 1 loaf French bread
- 2 cups grated gruyere
Bacon Beer Cheese Soup w/ chicken

Fry cut bacon in soup pot until lightly crispy
- 6 slices thick cut bacon
- 1 lb. Boneless skinless chicken breast
- 1/4 cup butter
- 1/4 cup flour
- 2 tsp. Garlic powder
- 2 tsp. Cayenne pepper
- 1 tsp. Smoked paprika
- 1 tsp. Kosher salt
- 1 tsp. Pepper
- 1 cup wheat beer
- 1 cup chicken broth
- 2 cups half and half
- 8 oz. Shredded mild cheddar
- 1 tsp. Worcestershire sauce
- Chives
- Croutons
Spanish Rice Wilfredo Style

Cook bacon. Add above ingredients
- 1/2 package of bacon
- 2 tbsp. Olive oil
- 1 onion chopped
- 1 green pepper
- 1 can whole pimento chopped
- 1/2 envelope beef bouillon
- Add manzanillo olives
- 1 envelope sazon with cilantro and achieve
- 2 tbsp. Green sofrito
- 6 cups of water
- 4 cups of rice

White Sangria

Pour wine, brandy, rum in pitcher and squeeze juice wedges from Orange, lemon, lime
- 1 bottle white wine
- 2/3 cup white sugar
- 3 sliced Orange
- 1 sliced lemon
- 1 sliced lime
- 2 oz. Brandy
- 1/2 liter ginger ale
- Shot or 2 of rum or peach schnapps
- Frozen or fresh berries
Creamy Mexican stew

Cook chicken till done...
- 16 boneless skinless chicken thighs
- 1 15 oz package chorizo
- 1 28 oz. Can crushed tomatoes
- 1 28 oz. Can petite diced tomatoes with juice
- 2 cans mild green chilies
- 4 medium potatoes diced small
- 1 12 oz. Frozen southwestern corn with onions and peppers
- 1/2 cup lime juice
- 1 1/2 tbsp cumin
- 1 tbsp coriander
- 1 tbsp chili pepper
- 2 tbsp minced onion
- Salt and pepper
- 1 qt. Light cream
artichoke dip

Drain artichoke saving 1/2 cup liquid
- 1 can artichoke hearts
- 1/4 tsp pepper
- 1/2 tsp salt
- Pinch red pepper flakes
- 1/2 tsp cumin
- 1 garlic clove
- 1 tsp balsamic vinegar

Line 8 inch square pan with foil and rub with butter
- 20 oz. Semisweet chocolate, chopped
- 1 1/2 tsp cinnamon
- 2 tsp. Ancho chili powder
- 14 oz. Condensed milk
- 1 cup sugar
- 3/4 cup butter, cut
- 3 cups mini marshmallows
- 1 tbsp. Vanilla

Measure flour in a large mixing bowl
- 1/4 cup flour
- 1 cup milk
- 1 pinch salt
- 3 eggs
- 1/2 tsp. Cinnamon
- 1 tsp. Vanilla extract
- 1 tbsp. White sugar

Scalloped potatoes

1. In small sauce pan melt butter and blend in flour
- 4 cups thinly sliced potatoes
- 3 tbsp. butter
- 3 tbsp. flour
- 1 1/2 cups milk
- 1 tsp. salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese to sprinkle on top
- paprika
Sweet potato, carrot, parsnip and chorizo soup

In a soup pot cook sausage in olive oil until browned
- 1 tbsp olive oil
- Chorizo sausage halved and sliced
- 1 lg spanish onion chopped
- 1 tsp minced garlic
- 8 C fat free chicken stock
- 4 carrots peeled & sliced 1" dice
- 4 parsnips peeled & sliced 1" dice
- 3 med sweet potatoes peeled & sliced 1" dice
- 2 small russet potatoes peeled & sliced 2" dice
- Chipotle chili powder and smoked paprika to taste (I used approx 1Tbsp each)
- Salt & pepper to taste
- 10oz bag baby spinach, chopped
