Ingredients

  • 2 tbsp olive oil
  • 1 large onion cut in to 1/2 inch pieces
  • 3 ribs of celery cut in 1/2 inch pieces
  • 1 leek white and light green parts cut in to 1/2 inch pieces
  • 3 carrots cut into 1/2 inch pieces
  • 2 tbsp tomato paste
  • 3 tbsp chili powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 3 cups homemade turkey or chicken stock
  • 1 cup of canned crushed tomatoes
  • 2 cups turkey gravy
  • 2 lbs shredded cooked turkey
  • 2 cans of black beans

Preparation

Step 1

Heat olive oil in a medium pan over med low heat. Add onions, celery, leek, and carrots; stirring until soft @10 min. Stir in tomato paste, chili powder, paprika, cumin, cayenne pepper til combined. Add stock, crushed tomatoes, gravy and shredded turkey and black beans. Simmer 1 hour. Serve with cheesy cornbread.
