Leftover turkey chili

Ingredients
- 2 tbsp olive oil
- 1 large onion cut in to 1/2 inch pieces
- 3 ribs of celery cut in 1/2 inch pieces
- 1 leek white and light green parts cut in to 1/2 inch pieces
- 3 carrots cut into 1/2 inch pieces
- 2 tbsp tomato paste
- 3 tbsp chili powder
- 2 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 3 cups homemade turkey or chicken stock
- 1 cup of canned crushed tomatoes
- 2 cups turkey gravy
- 2 lbs shredded cooked turkey
- 2 cans of black beans

Preparation
Step 1
Heat olive oil in a medium pan over med low heat. Add onions, celery, leek, and carrots; stirring until soft @10 min. Stir in tomato paste, chili powder, paprika, cumin, cayenne pepper til combined. Add stock, crushed tomatoes, gravy and shredded turkey and black beans. Simmer 1 hour. Serve with cheesy cornbread.
