Cantaloupe Smoothies

- 1 cantaloupe, seeded scooped out and roughly chopped
- 1 cup Greek yogurt (I used 2%. I wouldn’t recommend using nonfat because it won’t turn out as creamy)
- 2 tbsp honey
- 1 cup ice

Smoked Gouda Mushroom Quesadillas

Instructions Prep the peppers: Slice the onion and peppers into thin strips
- 1 yellow onion
- 2 bell peppers (I used red and yellow)
- 1 tablespoon olive oil
- 4 tablespoons butter, divided
- 16 ounces fresh sliced white mushrooms
- 1 1/4 cup shredded cheese (obvi, smoked gouda is my fave)
- 10 flour tortillas
- sour cream and cilantro and anything else for topping
Strawberry Shortcake

Mix the strawberries and sugar and let sit in the fridge for 30 minutes to a few hours
- 1 pound strawberries, sliced
- 2 tablespoons sugar

Easy Hoisin Shrimp

Blue Cheese Chicken Meatballs

For the meatballs: Place the chicken thighs, eggs, celery salt, and white pepper in a food processor
- 8 boneless, skinless chicken thighs, cut into chunks
- 2 eggs
