Camembert Shellfish Soup

MAKES 6 CUPS Melt butter in a 4-qt
- 4 tbsp. unsalted butter
- 1 cup chopped shallots
- 4 tbsp. flour
- 4 cups half & half
- 1 c. milk
- 2 Tablespoons Lobster bouillon paste (Better Than Bouillon brand)
- 2 Tablespoons Cognac
- 8 oz.camembert or St. Andre--rind removed and cut in pieces
- 1 lb. cooked lobster/shrimp or Prawns - I use lobster and cooked baby shrimp
- Kosher salt and freshly ground black pepper, to taste
- Chives -- chopped for garnish

Directions To make the crepe batter, mix the flour, 1 tablespoon oil, milk, and ½ cup water together until smooth

- 1 1⁄2 tablespoons oil

- 1 kg floury potatoes, such as maris piper, chopped into small chunks
- 1 litre fresh chicken stock
- 200 ml double cream
- 200 g reblochon cheese, chopped
Scallop Burger Sliders with a Cilantro Mayo

In a small skillet saute onion in butter over medium heat until translucent
- Cilantro Mayo, recipe follows:
- 1 medium Vidalia onion, finely diced or shallots
- 2 tablespoons butter
- 2 pounds fresh sea scallops
- 3 tablespoons all-purpose flour
- 3 tablespoons bread crumbs
- 2 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1 egg, beaten
- 1/2 cup finely chopped fresh chives
- 1/2 cup chopped fresh cilantro leaves
- 2 tablespoons vegetable oil
- 12 mini burger buns or small soft dinner rolls
- 1 cup fresh cilantro leaves
- 1 cup mayonnaise
- Salt and freshly ground black pepper
- Blend all ingredients in food processor except mayonnaise and salt and pepper. Process until cilantro is fine. Add mayonnaise and process just until blended. Season with salt and pepper, to taste
