Julia' s Potato Leek Soup

Heat the oil in a large (6-plus quart) stockpot or dutch oven over medium heat
- 2 tablespoons neutral oil, such as canola or grapeseed oil
- 4 to 5 medium russet potatoes (1 pound), peeled and roughly chopped
- 3 large leeks (1 pound), cleaned and thinly sliced
- 6 cups vegetable stock (or light chicken stock)
- Kosher salt, to taste
- 1 to 2 tablespoons freshly squeezed lemon juice
- 1/2 cup heavy cream
- 1/2 cup crème fraiche
- 1/3 cup minced parsley or chives

- Kosher salt
- 12 ounces whole-wheat penne
- 1 28-ounce can whole plum tomatoes
- 1 tablespoon unsalted butter
- 2 shallots, minced
- 1 clove garlic, minced

- 1/2 cup vodka
- 2/3 cup heavy cream
- 1/2 cup freshly grated parmesan cheese, plus more for topping
