- 1 skinless, boneless chicken breast half
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon seasoning salt
- 1/2 tablespoon vegetable oil
- 1/2 cup fresh sliced mushrooms
- 1 cup heavy whipping cream
- 1/2 cup brandy
CLASSIC MACARONI AND CHEESE

- 1/4 cup all-purpose flour

Perfect Fried Chicken***

Cook dark meat, which takes a bit longer, apart from white meat to ensure doneness
- 6 cups nonfat buttermilk
- 1/4 cup plus 5 teaspoons kosher salt
- 1/3 cup Tabasco Sauce, (optional)
- 2 two- to three-pound chickens, each cut into 8 pieces for frying
- 3 cups all-purpose flour
- 1 tablespoon freshly ground black pepper
- 1 1/2 teaspoons cayenne pepper
- 2 tablespoons baking powder
- 2 pounds vegetable shortening
- 6 tablespoons bacon drippings, (optional)

1. Make the sauce: Bring stock, 3 tbsp

- 1 cup chicken stock
- 3 tbsp. soy sauce
- 2 tbsp. oyster sauce
- 1 tbsp. dry sherry

- 2 cloves garlic, thinly sliced
- 1 1/2 " piece ginger, peeled and thinly sliced
- FOR THE EGG FOO YUNG:
- 1/2 lb. ground pork
- 3 tbsp. soy sauce
- 3 tbsp. cornstarch
- 1 1/2 tsp. rice wine vinegar
- 1 tsp. dry sherry
- 1 tsp. plus 1 tbsp. sesame oil
- Kosher salt and ground black pepper
- 1 tsp. canola oil, plus more for frying
- 6 oz. raw shrimp, peeled, deveined, and finely chopped
- 1/3 cup bean sprouts
- 1/3 cup sliced scallions, plus more for serving
- 6 eggs, beaten
Chicken Enchilada Rice Casserole

Cook the rice. I cooked it with 4 cups of water and ¼ cup of butter

- 2 cups dry Basmati rice
- 2 cans (10 oz each) Enchilada sauce (I used Old El Paso)
- 1 can (16 oz) refried beans (I used Old El Paso)
- 1 cup white cheddar, shredded
- 1 cup Monterey Jack cheese, shredded
- 1 can (11 oz) corn kernel, drained
