- ◦ 4 (6 ounce) lamb necks, fillets, trimmed
- ◦ 1 tablespoon olive oil
- ◦ 17 1/2 ounces puff pastry
- ◦ 1 egg yolks, whisked with a fork
- ◦ 1 -4 fresh sage leaves, chopped
- Sauce
- ◦ 227 g red currant jelly
- ◦ 7 ounces port wine
- ◦ 2 sprigs fresh rosemary
- ROASTED SHALLOT-----
- BALSAMIC VINEGAR SAUCE-----
- 2 c Beef stock
- 1 1/4 c Balsamic vinegar
- 1/2 lb Butter
- cut into small pieces
- 8 Shallots -- roasted
- and finely chopped
- Salt & Pepper (to taste)
- LOIN OF LAMB EN CROUTE-----
- 4 Lamb loins (6 oz each)
- cleaned
- 1 tb Olive oil
- 1 Garlic clove
- Salt and pepper
- 2 tb Olive oil

- I sprinkled a little hot paprika on top before broiling, but i think it was just that I was feeling the need to balance my red and green: If you don’t sprinkle with paprika, add a droplet or two of Tabasco or other pepper sauce.
