Almost No-Knead Baguette

1) Find a large (6-quart) bowl or bucket, for dough storage in the fridge
- 24 ounces lukewarm water
- 33 ounces in Winter (Summer-34 to 35 ounces) King Arthur Unbleached All-Purpose Flour
- 1 tablespoon table salt or 1 1/2 tablespoons kosher salt
- 1 tablespoon instant yeast
"Best Beef Stew"

Use a good-quality, medium-bodied wine, such as Côtes du Rhône or Pinot Noir, for this stew
- 2 medium garlic cloves , minced or pressed through garlic press (about 2 teaspoons)
- 4 anchovy fillets , finely minced (about 2 teaspoons)
- 1 tablespoon tomato paste
- 1 boneless beef chuck-eye roast (about 4 pounds), trimmed of excess fat, cut into 1 1/2-inch pieces (see note and step by step below)
- 2 tablespoons vegetable oil
- 1 large onion , halved and cut from pole to pole into 1/8-inch-thick slices (about 2 cups)
- 4 medium carrots , peeled and cut into 1-inch pieces (about 2 cups)
- 1/4 cup unbleached all-purpose flour
- 2 cups red wine (see note)
- 2 cups low-sodium chicken broth
- 2 bay leaves
- 4 sprigs fresh thyme
- 4 ounces salt pork , rinsed of excess salt (see note)
- 1 pound Yukon gold potatoes , scrubbed and cut into 1-inch pieces
- 1 1/2 cups frozen pearl onions , thawed
- 2 teaspoons unflavored powdered gelatin (about 1 packet)
- 1/2 cup water
- 1 cup frozen peas , thawed
- Table salt and ground black pepper
CROCK POT GARLIC TOMATO CHICKEN

Instructions Spray your crock pot with cooking spray Put your chicken in your crock pot Combine everything else...
- 1 lb boneless, skinless chicken breasts
- 2 15 oz can diced tomatoes
- 1 onion, chopped
- 1 clove garlic, minced (we used freeze dried garlicas always)
- 1 T dried basil
- salt and pepper to taste

"Sweet-&-Spicy Bacon Crackers

Directions Place brown sugar, chili powder, black pepper, and cayenne pepper in a small bowl
- 1 lb. bacon {do not use thick-cut bacon ... it won't cook through quickly enough in the oven}

- 1 cup chopped onion

- 1 tablespoon steak seasoning (I used McCormick)

Banh Mi, Spicy Meatball

Start by preparing the carrot and daikon
- Carrot Daikon Salad:
- 2 medium carrots, julienned
- 1 cup julienned daikon radish
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 3 tablespoons rice wine vinegar
- 2 teaspoons sesame oil
- Meatballs:
- 1 pound ground pork
- 2 tablespoons chopped cilantro, basil, or parsley
- 1 scallion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon Sriracha
- 2 teaspoons sugar
- salt and pepper, to taste
- 1 tablespoon cornstarch

Pearl Meatball Soup

The most time-consuming process in this recipe, is to shape the tiny meatballs that I call "pearl meatballs"
- ◦1 lb of ground beef (I used 85% lean)
- ◦1 large onion
- ◦1 small egg white
- ◦1 medium potato
- ◦1 medium carrot
- ◦1/2 green bell pepper
- ◦1 medium tomato
- ◦3 cloves of garlic
- ◦6 cups of pre-boiled water
- ◦1/2 tsp salt for the meatballs and 1 tsp for the soup (alter the salt use as you prefer)
- ◦1/2 tsp ground cumin for the meatballs and 1/2 tsp of ground cumin for the soup
- ◦1/3 tsp ground black pepper and 1/3 tsp for the soup
- ◦1/3 cup rice
- ◦1 bay leaf
- ◦4 Tbsp of oil of your choice

- 1 cup fresh bread crumbs
- 1 large egg
