Creamy Pesto Dressing

Combine mayonnaise, Romano cheese, vinegar, pesto, 2 tablespoons heavy cream and granulated garlic in a bowl
- 1/4 cup mayonnaise
- 1/4 cup grated Romano cheese
- 1 tablespoon white wine vinegar
- 3 tablespoons prepared pesto
- 2-4 tablespoons heavy cream
- 1/4 teaspoon granulated garlic
- kosher salt and fresh cracked pepper to taste
Lemony Lemon Brownies

Preheat the oven to 350 degrees
- For the tart lemon glaze:
- 3/4 cup all-purpose flour {King Arthur All-Purpose Flour}
- 3/4 cup granulated sugar
- 1/4 teaspoon salt {Sea Salt}
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 4 tbsps lemon juice
- 8 tsps lemon zest
- 1 cup icing sugar
Breaded Chicken Breasts with Goat Cheese and Thyme Filling

Preheat oven to 300 F. Place half of the bread in a food processor and pulse until coarsely ground
- Goat Cheese and Thyme Filling:
- 4 boneless skinless chicken breasts, tenderloins removed
- salt and ground black pepper
- cheese filling (see recipe below)
- 4-5 slices white sandwich bread, torn into large pieces
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 3 large eggs, lightly beaten
- 1 teaspoon Dijon mustard
- 1 tablespoon unsalted butter, softened
- 2 teaspoons minced fresh thyme leaves
- 1 small garlic clove, minced
- 3 oz cream cheese, softened
- 2 oz goat cheese, softened
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Cheesy Potatoes Au Gratin

Select Saute and add butter to the pressure cooker pot
- 2 tablespoons butter
- 1/2 cup chopped onion
- 1 cup chicken broth
- 6 medium sized potatoes peeled and sliced 1/8 inch thick
- 1/2 teaspoon salt

- 1/2 cup sour cream
- 1 cup shredded Monterey jack cheese
- 3 tablespoons butter, melted

Cinnabun, Chocolate, and Peanut Butter Fudge

For Peanut butter fudge, just use Peanut butter chips
- 3 cups sugar
- 2/3 cup evaporated milk
- 3/4 cup (1 1/2) sticks Margarine
- 1 12 oz. pkg. Flavored chips (see note at bottom)
- 1 1/2 cup marshmallow cream
- 1/2 t. vanilla
- 1/2 C Pecans or other nuts, chopped (optional, I leave them out)
"Dark Fudge Cake with Salted Graham Buttercream

Preheat oven to 350. Line the bottoms of 3 8" cake pans with circles of parchment paper
- For the cake:
- 1 3/4 cup flour
- 2 cups sugar
- 1 cup unsweetened cocoa powder
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. salt
- 2 eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 1 tbsp. vanilla
- 3/4 cup very hot, very strong coffee
- For the buttercream:
- 1 lb. unsalted butter, at room temperature
- 4 cups powdered sugar
- 2 tsp. vanilla
- 1 cup crushed graham crackers (you want them as close to powder as possible, so I find it's fastest to blitz them in a food processor)
- 1 1/2 tsp. sea salt
Navajo Fry Bread

- 1/4 cup cold water
- 1/2 teaspoon peppermint extract
- 2 cups heavy whipping cream, divided
- 1 cup crushed soft peppermint candy*, plus extra for garnish
- Garnish:
- 1 cup heavy whipping cream
- 1/3 cup sifted powdered sugar
- 1/2 teaspoon vanilla or peppermint extract
- Crush peppermint
- You can use Red Bird Brand (the original soft peppermint) or Bob’s peppermints are a popular choice
