Vanilla Hot Chocolate Mix

Place sugar in large bowl
- 4 - 4 cups granulated sugar
- 1/2 - 1/2 vanilla bean, split crosswise (see tips, below)
- 1 1/2 - 1 1/2 pounds high-quality semisweet chocolate, coarsely chopped

Maui Style Teriyaki Beef Panini

Place flank steak and teriyaki sauce (reserving 1/2 cup of sauce) in a large resealable plastic bag
- 1-1/4 lb. flank steak, very thinly sliced crosswise
- 10 oz. teriyaki sauce/marinade (I used Kikkoman Less Sodium Teriyaki Marinade & Sauce)
- 1/2 cup plus 1 tablespoon canola oil
- 1 Maui onion (Vidalia or Walla Walla onions would be fine substitutes), sliced thinly
- 1 cup flour
- 1/2 teaspoon salt

- For Drunken Chili:
- 2 Pounds Stew Beef Cut Into 1-2 Inch Cubes
- 1 dried Ancho, mulato, pasilla, & New Mexico chiles (or any combo of these 4 available in your area)
- 1 Red Bell Pepper
- 1 Large Onion
- 5 Cloves Garlic
- Water (to Rehydrate Chiles)
- Two 12 Ounce Bottles Beer
- Two 8 Ounce Cans Tomato Sauce
- 1 Small Can Tomato Paste
- 2 Tablespoons Vegetable or Peanut Oil
- 3 Tablespoons Homemade Chili Powder (recipe to Follow) (3 to 4)
- 2 Tablespoons Ground Cumin
- 1 1/2 Tablespoons Mexican Oregano
- 1 1/2 Tablespoons Smoked Paprika
- 1 Teaspoon Salt
- 1 Teaspoon Ground White Pepper
- 1 Can Pinto & Kidney Beans
- 1 Teaspoon Cocoa Powder
- 2 Teaspoons Honey
- 2 Tablespoons Brown Sugar
- 1/4 Cup Harina De Maiz (corn Meal)
- Additional Salt & Pepper to Taste
- For Homemade Chili Powder:
- 1 dried Ancho or Mulato Chile
- 1 dried Pasilla Chile
- 3 dried New Mexico Chile
- 4 dried De Arbol Chile
