INSTANT POT JASMINE RICE

You want to use a 1:1 ratio of rice to water, so for every 1 cup of rice, you’ll use 1 cup of water (or broth)

- 1 1 1 tablespoon oil of choice (try coconut!)
- 1 1 1 teaspoon kosher salt
Jamican Beef Stew

Adjust oven rack to lower-middle position and preheat oven to 300°F
- 1 tablespoon olive oil
- 2 1/2 pounds boneless beef stew meat (such as chuck), cut into 1 inch cubes
- Kosher salt and freshly ground black pepper
- 1 medium white onion, finely chopped
- 4 carrots, peeled and cut into chunks
- 2 habanero chilies, seeded and minced
- 2 medium cloves garlic, minced (about 2 teaspoons)
- 1/4 cup rum
- 2 cups homemade or store-bought low-sodium chicken stock
- 1/2 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1 teaspoon hot pepper sauce
- 4 sprigs fresh thyme
- 2 bay leaves
- 1 teaspoon brown sugar
- 1 tablespoon red wine vinegar
- 1 (14.5-ounce) can diced tomatoes, preferably fire roasted
- 1 tablespoon soy sauce
- 1 1/2 tablespoons steak sauce, such as A-1
- 1/2 cup chopped scallions
- 2 cups cooked long-grain white rice

- 1 pound small red beans (about 2 cups), rinsed and picked over
- 4 slices bacon (about 4 ounces), chopped fine (see note)
- 1 medium onion, chopped fine (about 1 cup)
- 1 small green bell pepper, seeded and chopped fine (about 1/2 cup)
- 1 celery rib, chopped fine (about 1/2 cup)
- 3 medium garlic cloves, minced or pressed through garlic press (about 1 tablespoon)
- 1 teaspoon fresh thyme leaves
- 1 teaspoon sweet paprika (see note)
- 2 bay leaves
- 1/4 teaspoon cayenne pepper
- Ground black pepper
- 3 cups low-sodium chicken broth
- 6 cups water
- 8 ounces andouille sausage, halved lengthwise and cut into 1/4-inch slices (see note)

- 1 teaspoon red wine vinegar, plus extra for seasoning
